Good morning friends! Today, I am so excited to share my simple and delicious vegan sweet potato and chickpea curry recipe. This recipe is one of my favorite ones to meal prep for the week. It is incredibly easy to make and it tastes amazing. This vegan curry is packed with nutrients and spices. It utilizes budget friendly plant based ingredients like sweet potato, chickpeas, mushrooms, greens, and more.

I especially love this recipe for the chilly fall and winter months. It is the perfect cozy recipe to warm you right up on a cold day. Now, let’s go over a few quick things to note for this recipe. What Veggies Are Good For Curry?

There are so many different delicious veggies you can use in curry. Some of my favorite ones for my vegan curry are sweet potatoes, garlic, onion, and greens. These ingredients are packed with nutrients and flavor. They pair incredibly well together. They also compliment the curry paste and other spices used in this vegan curry recipe. Of course, these are just a few of my favorite veggies to use in curry. You can easily customize your own curry and add whichever vegetables you enjoy.

Vegan Sweet Potato Curry – Ingredients

  • Sweet Potato – The first essential ingredient you will need for this recipe is, of course, the sweet potato.
  • Chickpeas – The chickpeas are another essential ingredient for this delicious vegan curry. They add a ton of flavor and some plant based protein to the dish.
  • Mushrooms – Mushrooms are one of my favorite veggies, so I had to include them in this curry dish. While they aren’t typically found in traditional curry, I added them in for some extra flavor and nutrients.
  • Bell Pepper – The bell pepper adds a ton of flavor to this curry recipe. I like to use red or orange bell pepper, as I think these varieties have a bit more sweetness than green bell pepper.
  • Baby Carrots – The baby carrots pair extremely well with the other veggies and spices present in this vegan curry. They are an essential ingredient for my vegan curry recipe.
  • Yellow Onion – The yellow onion combines perfectly with all of the other veggies and spices present in this tasty sweet potato and chickpea curry.
  • Greens – The greens add a ton of nutrients to this sweet potato curry. They tend to shrink down a lot as they cook. You can use whichever greens you prefer or have on hand. I used some power greens that I picked up from Trader Joe’s, which has a mix of kale, spinach, and chard.
  • Red Curry Paste – The red curry paste is an absolutely essential ingredient which adds a ton of flavor and spice to this curry. After all, you can’t have a curry dish without the curry flavor.
  • Minced Garlic – Minced garlic is a key ingredient in this delicious vegan curry. It adds a ton of flavor to this recipe.
  • Turmeric – Turmeric adds beautiful color and flavor to this curry. It is a vibrant orange colored spice.
  • Cumin – The cumin is another spice you will use in this vegan sweet potato curry.
  • Garlic Powder – Garlic powder adds even more garlic flavor to this vegan curry.
  • Onion Powder – The onion powder adds some onion flavor to the sweet potato curry.
  • Coconut Milk – Coconut milk is the first important source of liquid you will need for the curry. The coconut flavor blends perfectly with the other key flavors present in this recipe.
  • Water – The water adds extra liquid to this curry recipe. However, if you want a really strong coconut flavor, you can sub the water out for extra coconut milk.

Ingredients
  

  • 2 large peeled and cooked sweet potatoes (cut into small cubes)
  • 1 cup chickpeas (drained and rinsed)
  • 1/2 cup chopped baby carrots
  • 1/2 cup chopped bell pepper (I like red or orange)
  • 1/2 cup chopped mushrooms
  • 1/2 cup chopped yellow onion
  • 1 large handful fresh greens (I like spinach and kale)
  • 1 tbsp red curry paste
  • 2 tsp minced garlic
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp turmeric
  • 1 cup coconut milk
  • 1/2 cup water (can sub additional coconut milk)

Instructions
 

  • Add all curry ingredients to a large pan.
  • Cook the curry mixture over low heat (stirring occasionally) until the vegetables are cooked down and soft, about 10 – 15 minutes.
  • Let the curry cool for a bit, then serve it up with naan, rice, or another grain (I love quinoa).
  • Dig in and enjoy!
