Vegan Tropical Mango Overnight Oats

Good morning friends! Today, I am so excited to share my simple and delicious tropical mango overnight oats recipe. This recipe is packed with flavor and nutrients. It’s the perfect sweet summer breakfast option, and it’s insanely easy to make. With just a few key ingredients, like oats, chia seeds, non-dairy milk, and mango chunks, you’ll be able to prep a tasty breakfast in just minutes.

One of the things that I love most about overnight oatmeal is the fact that it comes together in minutes. Once you combine all the ingredients together in a jar, you simply pop the mixture in the refrigerator overnight to set. Then, in the morning, your oatmeal is ready to enjoy. I love making overnight oats for busy workdays because I don’t have to waste any time cooking in the morning. I simply get up and grab my premade breakfast. Then, I’m well fueled and ready to take on the day.

Now, let’s go over some quick things to note for this tropical mango overnight oats recipe. Then, we will dive into the list of ingredients you’ll need to make this recipe a smashing success!

What Fruit Is Best For Overnight Oats?

There are many different fruits to choose from when it comes to making overnight oats. Honestly, the “best” fruit for overnight oats will be different for every individual. It really depends on your personal flavor preferences as well as the specific flavor combination you are trying to create. For example, I like to use blueberries or strawberries when I want to make a peanut butter and jelly overnight oatmeal. When I want a banana bread overnight oatmeal, I use overripe banana. For this tropical themed overnight oatmeal, I chose to use mango (and coco whip for a slight coconut flavor), which I think works perfectly in this recipe.

Can You Add Mango In Oats?

You can absolutely add mango in oatmeal. While it might sound like a slightly weird combo, it’s actually a delicious way to sweeten your oatmeal naturally with fruit. I have made many different mango oatmeal bowls before. Not only have I made this cold tropical mango overnight oatmeal, but I have also made microwave oatmeal with warmed mango chunks and cinnamon. I find that the flavor combination of oatmeal with any fruit and some nut butter is absolutely delicious, and mango oatmeal is no exception.

Now that we have discussed a few things to note for this recipe, let’s dive into the list of ingredients you will need to make this vegan tropical mango overnight oatmeal.

Vegan Tropical Mango Overnight Oats – Ingredients

  • Quick Oats – The quick oats serve as the key base ingredient for this overnight oats recipe. You can use whichever brand you enjoy most. To make this recipe gluten free friendly, use your favorite gluten free oats.
  • Frozen Mango Chunks – The mango chunks add a ton of mango flavor and sweetness to this overnight oats recipe. They are an essential ingredient which packs a powerful flavor punch. You can use fresh or frozen mango chunks.
  • Chia Seeds – The chia seeds help the mixture come together. They absorb some of the liquid and help make the overnight oats thicker and more cohesive. They also add some extra nutrients to the overnight oats.
  • Hemp Hearts – The hemp hearts add a bit of crunch and some extra nutrients to this recipe.
  • Cinnamon – The cinnamon adds some spice and additional sweet flavor to this tropical mango overnight oatmeal.
  • Non-Dairy Milk – The non-dairy milk adds a source of liquid and creaminess to the overnight oats. I used unsweetened soymilk, but you can use whichever non-dairy milk you prefer or have on hand.
  • Coco Whip – The coco whip adds to the tropical flavor of this oatmeal recipe. It also adds creaminess and sweetness to the oatmeal.
  • Peanut Butter – The peanut butter is the perfect topping which completes this oatmeal recipe. It adds a ton of richness to the oatmeal. You could also sub another nut or seed butter if you prefer.
