Good morning friends! Today, I am so excited to share my simple and delicious chocolate banana oat protein bars recipe. This recipe came about because I wanted to make a chocolatey breakfast that was healthy, gluten free friendly, and easy to meal prep for busy work weeks.

After testing out a few different variations of these oat breakfast bars, I finally came up with the perfect combination of ingredients to create moist and sweet oat bars that are packed with protein and rich chocolate flavor. So, without further ado, let’s go through some quick things to note for this recipe. How Are These Protein Bars Sweetened?

The vegan protein bars are sweetened with three main ingredients. First off, the chocolate protein powder provides some sweetness. This is why it is important to use a chocolate protein powder that you actually like the taste of. I used the Orgain vegan protein and superfoods creamy chocolate fudge protein powder, which I really enjoy the taste and texture of in baked goods. Next, the overripe bananas provide a ton of sweetness and moisture. Finally, the chocolate chips provide sweetness and rich chocolate flavor. With these three ingredients, your vegan chocolate banana oat protein bars will have a ton of sweetness and flavor.

Plus, you could add even more sweetness to these bars by serving them up with a drizzle of pure maple syrup or vegan whipped cream. I like to heat mine up and add a drizzle of peanut butter and spoonful of coco whip before digging in, especially if I’m eating one of these for dessert at the end of the night.

  • Vegan Chocolate Protein Powder – The vegan chocolate protein powder adds protein and chocolate flavor to this recipe. I used the Orgain brand vegan protein and superfoods protein powder in the creamy chocolate fudge flavor.
  • Overripe Bananas – The overripe bananas are one of the main ingredients in these chocolate banana oat bars. You will need 1.5 overripe bananas for this recipe. They will be mashed up and added to the batter. This ingredient is essential for moisture and natural sweetness. The riper your bananas are, the more sweeter they will be. If your banana peels are yellow with brown spots, they are perfect to use in this recipe.
  • Chocolate Chips – The chocolate chips add a ton of sweetness and rich chocolate flavor to this recipe. Ingredients
  

  • 1 cup rolled oats (blended into a fine oat flour)
  • 1 scoop vegan chocolate protein powder (I used Orgain vegan protein & superfoods creamy chocolate fudge protein powder, 1 scoop = 25 grams)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1.5 medium overripe bananas (mashed)
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 2 tbsp creamy peanut butter
  • 1/4 cup chocolate chips

Instructions
 

  • Preheat the oven to 350℉.
  • In a large mixing bowl, combine the oat flour, chocolate protein powder, baking powder, and baking soda.
  • Make a well in the center of the bowl, then add the mashed bananas, nut milk, and peanut butter.
  • Mix all liquid ingredients well to combine.
  • Mix the wet ingredients into the dry to form a smooth batter.
  • Gently fold in 2 tbsp of chocolate chips.
  • Pour the batter into a greased or lined square/rectangular baking dish.
  • Evenly distribute the remaining 2 tbsp chocolate chips on top of the oat bar batter.
  • Bake the chocolate banana oat protein bars for about 30 minutes, or until a toothpick inserted comes out clean.
  • Let the bars cool completely before cutting them into eight rectangular pieces.

As you guys can tell, these chocolate banana oat protein bars are super easy to make! They require less than ten simple ingredients, and they are so tasty. I love to prep these bars on Sunday and eat them throughout the work week for a quick breakfast, snack, or dessert. I like to serve mine up with some vegan coco whip and a drizzle of peanut butter.
