Chocolate Banana Oat Protein Bars

The best moist, sweet, and delicious vegan chocolate oat bars.

Ingredients
  

  • 1 cup rolled oats (blended into a fine oat flour)
  • 1 scoop vegan chocolate protein powder (I used Orgain vegan protein & superfoods creamy chocolate fudge protein powder, 1 scoop = 25 grams)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1.5 medium overripe bananas (mashed)
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 2 tbsp creamy peanut butter
  • 1/4 cup chocolate chips

Instructions
 

  • Preheat the oven to 350℉.
  • In a large mixing bowl, combine the oat flour, chocolate protein powder, baking powder, and baking soda.
  • Make a well in the center of the bowl, then add the mashed bananas, nut milk, and peanut butter.
  • Mix all liquid ingredients well to combine.
  • Mix the wet ingredients into the dry to form a smooth batter.
  • Gently fold in 2 tbsp of chocolate chips.
  • Pour the batter into a greased or lined square/rectangular baking dish.
  • Evenly distribute the remaining 2 tbsp chocolate chips on top of the oat bar batter.
  • Bake the chocolate banana oat protein bars for about 30 minutes, or until a toothpick inserted comes out clean.
  • Let the bars cool completely before cutting them into eight rectangular pieces.
