Anyway, enough on that. Today’s recipe is for delicious and simple homemade chocolate peanut butter protein bars. This no bake recipe is vegan, gluten free friendly, sweet, and flavorful. It’s the perfect quick and easy snack to meal prep and enjoy throughout the week. Plus, the ingredients list is short and simple.

My homemade version starts with a base of oat flour and protein powder. I used these two ingredients specifically to form a protein packed dry base for the protein bars. Since I wanted to make these protein bars chocolate peanut butter flavored, I opted for a chocolate peanut butter cup flavored protein powder. I think it’s worth noting that some of the flavor and sweetness in these protein bars comes from the protein powder itself, so it’s important to choose one that you like the taste of. For even more chocolate flavor, I added in some cocoa powder as well.

Once you have the dry base ingredients assembled, you’ll want to add the liquid ingredients to complete your homemade protein bars. These homemade protein bars contain peanut butter, maple syrup, and nut milk. Depending on which protein powder you use, you might need more or less non-dairy milk to achieve the dough-like consistency that we’re going for.   • Vegan Chocolate Protein Powder – The chocolate protein powder is used to add sweetness and chocolate flavor to your protein bars. I used the Orgain simple protein powder in the chocolate peanut butter cup flavor.
  • Cocoa Powder – The cocoa powder adds even more chocolate flavor to your protein bars. I used Hershey’s special dark cocoa powder.
  • Creamy Peanut Butter – The creamy peanut butter adds richness, flavor, and stickiness to these homemade protein bars.
  • Pure Maple Syrup – The pure maple syrup adds flavor, sweetness, and stickiness to the homemade protein bars. It is the perfect liquid sweetener to use in this recipe.
  • Non-Dairy Milk – The non-dairy milk adds moisture and creaminess to these homemade protein bars. I used coconut almond milk, but you can use whichever kind you have on hand or prefer.
  • Roasted Peanuts – The roasted peanuts add a ton of flavor and a nice crunch to these homemade protein bars. They will be added on top of the protein bars before you pop the bars in the refrigerator to chill and set.

Ingredients
  

  • 1/2 cup quick oats (blended into a fine oat flour)
  • 1 scoop vegan chocolate protein powder (1 scoop = 19 grams, I used Orgain simple protein powder)
  • 1 tbsp cocoa powder I used Hershey's special dark)
  • 3 tbsp creamy peanut butter
  • 2 tbsp pure maple syrup
  • 3 tbsp non-dairy milk (I used coconut almond milk)
  • 1 tbsp roasted peanuts (for topping)

Instructions
 

  • In a large mixing bowl, combine the oat flour, protein powder, and cocoa powder.
  • Add the peanut butter and pure maple syrup and mix again.
  • Slowly add the non-dairy milk to form a thick, sticky dough.
  • Press the dough in a thin single layer on a lined or greased square/rectangular baking dish.
  • Top the protein bar dough with the roasted peanuts.
  • Refrigerate the protein bar dough for at least an hour.
  • Cut the dough into four equal-sized bars.
