Good morning friends! Today, I am so excited to share my quick and easy dill roasted carrots recipe. This recipe is simple, delicious, and the perfect one to serve up with a delicious hummus dish for a healthy snack. Or, you could use it as a side to pair with your favorite sandwich for an easy lunch option.

Regardless of how you choose to serve these dill roasted carrots, one thing remains true. They are packed with both flavor and nutrients. So, let’s take a look at a few quick things to note for this recipe. Then, we will dive into the list of ingredients you will need to make these quick and easy dill roasted carrots.


How Do You Soften Carrots Quickly?

There are a couple ways you can easily soften carrots. My two favorite methods are either boiling them in water on the stovetop or roasting them in the oven at high heat. For this recipe, we will use the oven to roast our carrots until soft. With the combination of spices and oil, they come out super flavorful.


Is It Better To Boil Or Roast Carrots?

This is a very common question when it comes to cooking carrots. Really, the answer is dependent on how you plan to flavor your carrots. In general, boiling carrots will make them nice and soft more quickly. However, roasting carrots at high heat with some sort of glaze or oil and seasonings will pack in a ton of flavor. So, if you want to seasoning your carrots before cooking them, I think that roasting the carrots in the oven is the way to go.

Alternatively, you can boil your carrots until soft, and then add some sort of glaze or seasonings to them after they cook. Or, if your goal is to use your carrots in a soup or stew, you will definitely want to boil them with all of your other veggies.

Either way, I think cooked carrots taste absolutely delicious. So, no matter which way you choose to cook them up, you will end up with a soft, delicious, nutrient packed vegetable side dish.


How Do You Cut Carrots For Roasting?

There are many different methods you can use to successfully roast carrots in the oven. The first decision you have to make is whether or not you want to use full-size or baby carrots. For this recipe specifically, I decided to go with baby carrots. However, I have successfully roasted full-size carrots many times before.

If you choose to use baby carrots for roasting, you can simply lay them out on a lined or greased baking sheet in a single layer. If you prefer to use full-size carrots, you can either cut them into small slices, cut them in half lengthwise, or place them on your baking sheet fully intact. The smaller you cut them up, the quicker they will cook. So, you’ll want to either increase the bake time or temperature if you decide to leave the carrots whole.

Keep in mind that the bake time and temperature used in this recipe is meant for baby carrots. So, if you want to make sure your carrots come out nice and soft, definitely go with baby carrots.

  • Baby Carrots – The baby carrots are the first essential ingredient you will need for this recipe. They will be seasoned with a delicious dill pickle seasoning (which I picked up from Trader Joe’s) and drizzled with olive oil. Then, you will pop them in the oven to bake at high heat until nice and soft.
  • Dill Pickle Seasoning – The dill pickle seasoning adds a ton of flavor to this dill roasted carrots recipe. I got mine at Trader Joe’s. Alternatively, you can use some dill weed and salt to taste.
  • Olive Oil – The olive oil adds ample flavor to the baby carrots.

Ingredients
  

  • 2 cups baby carrots
  • 1 tsp Trader Joe's dill pickle seasoning (can sub dill weed and salt to taste)
  • 1/2 tsp olive oil

Instructions
 

  • Preheat the oven to 375° F.
  • Add the baby carrots to a mixing bowl and coat them evenly in the olive oil.
  • Add the dill pickle seasoning and mix again to coat the carrots.
  • Place the carrots in a single layer on a greased or lined baking sheet.
  • Bake the carrots for about 40 minutes, or until soft.
