This chocolate chip banana flavor combination is one of my absolute favorites. Pair it with a big spoonful of peanut butter right on top, and you have an incredible healthy, vegan, and balanced breakfast or dessert.

Making baked oatmeal for one is actually surprisingly easy. While most oatmeal bakes require a large square or rectangular baking dish, this recipe calls for a small dish or ramekin. The ingredients list is designed to create just enough oatmeal batter to make one single serve baked oatmeal cake. I actually prefer baked oatmeal for one since it’s super fresh and hot every single time you eat it.

However, I do like to meal prep larger batches of baked oats on occasion for a quick, easy, and healthy breakfast option. Fortunately, you can easily quadruple this baked oatmeal recipe in order to serve more people or have leftovers to eat throughout the week. Simply pop the quadrupled mixture into a larger square or rectangular baking dish and adjust the bake time as necessary.


How Do You Make Baked Oatmeal Without Eggs?

It is actually quite easy to make baked oatmeal without eggs. Many non-vegan baked oat recipes don’t require eggs, and my vegan baked oatmeal recipes obviously don’t. I use a variety of ingredients to ensure that my baked oats still turn out fluffy and moist without the use of eggs. Some of my favorite ingredients to use include applesauce, overripe bananas, nut milk or water, and baking powder. These ingredients add moisture, creaminess, and an incredible fluffy texture to your baked oatmeal.

With this recipe specifically, I opted for the banana rather than the applesauce since I wanted to create a sweet and delicous banana chocolate chip flavor combination.   • Baking Powder – The baking powder is used to ensure that the baked oatmeal rises nicely to achieve a light and fluffy texture. It is an essential ingredient that you definitely do not want to omit.
  • Chocolate Chips – The chocolate chips add a ton of sweetness and rich chocolate flavor to this baked oatmeal recipe. You can use whichever kind you enjoy most. I like to use dark chocolate chips or chunks.
  • Water – The water acts as the key source of liquid for this recipe which helps the mixture come together to form a smooth batter. You could also sub your favorite nut milk for extra creaminess.
  • Overripe Banana – The ripe or overripe banana adds a ton of sweetness, moisture, and flavor to this banana chocolate chip baked oatmeal. If the banana peel is yellow with brown spots, the banana is perfectly overripe to use in this recipe.
  • Peanut Butter – The peanut butter adds a ton of richness and flavor to this recipe. I like to add a big spoonful of natural creamy or crunchy peanut butter right on top of the oatmeal once it is done baking.

Ingredients
  

  • 1/2 cup rolled oats
  • 1/4 medium overripe banana (plus more for topping)
  • 1 tbsp crunchy peanut butter (for topping)
  • 1/2 tbsp chocolate chips (plus more for topping)
  • 1/4 tsp baking powder
  • 1/4 cup + 3 tbsp water (can sub nut milk)
  • pure maple syrup to taste (for topping)

Instructions
 

  • Preheat the oven to 350° F.
  • Add the oats, baking powder, banana, and water to a high speed blender.
  • Blend for about 30 seconds until a smooth oatmeal batter forms.
  • Pour the oatmeal batter into a mixing bowl.
  • Gently fold in the chocolate chips.
  • Transfer the oatmeal batter to an oven safe dish or ramekin.
  • Top the mixture with more chocolate chips and fresh banana slices if desired.
  • Bake the oatmeal for about 20 – 25 minutes, or until your desired consistency is achieved.
