Good morning friends. Today I am super excited to share a delicious tropical smoothie recipe with all of you. As the weather has been warming up here in North Carolina, I am starting to crave refreshing, cold treats such as smoothies and vegan ice cream.

Recently, I made a simple and delicious pineapple coconut flavored smoothie, and it turned out so incredible that I knew I had to share it with all of you. I figured that the timing is perfect right now since we are rapidly approaching the spring and summer seasons.

Now, let’s go ahead and go through some logistics for this thick pineapple coconut smoothie, as well as the list of ingredients you will need to make the recipe.


How Do You Make The Best Smoothies?

There are a few key steps I typically follow to ensure that my smoothies turn out as delicious as possible. I want to quickly share a few of my favorite tricks for making thick, creamy, and tasty vegan smoothies.

First off, I usually prefer using nut milk over water in my smoothies. This is because the nut milk makes the smoothie super creamy and richer in flavor (at least, in my opinion). I also usually go for vanilla almond milk rather than original for that little hint of vanilla flavor. In addition to that, I try to use frozen fruit as often as I can. This ensures that my smoothies turn out nice and cold without having to rely on ice, which can sometimes water down the flavor of the overall smoothie. Plus, the frozen fruit helps keep the smoothie consistency nice and thick, which is what I personally prefer.

Next, I make sure to use a high speed blender or food processor when making my smoothies and smoothie bowls. You might be surprised by how much of a difference a high quality kitchen appliance truly can make. When I am making pourable smoothies that I intend to drink, I usually use my Ninja Foodi Duo blender. Before I purchased the Ninja Foodi, I used a NutriBullet blender, which also worked quite well.

When I am making super thick smoothie bowls or banana ice cream that I intended to eat with a spoon, I typically use my KitchenAid food chopper, which is essentially a miniature food processor. The food chopper is nice because it doesn’t require as much liquid to blend the frozen fruit, which makes it easier to end up with a thicker texture that is more like soft serve ice cream.

Finallly, I often like to add toppings to my smoothies. Depending on the flavor, I might top my smoothie with vegan coconut whipped cream, coconut flakes, chocolate chips, chopped nuts, and the list goes on. I also really enjoy adding nut butter to my banana smoothies, such as creamy almond butter or peanut butter.

  • Frozen Pineapple – The first ingredient you need for this recipe is, of course, the frozen pineapple. Pineapple has always been one of my absolute favorite fruits, and it tastes especially yummy in smoothies.
  • Frozen Banana – The next ingredient you need for this smoothie is frozen banana. Frozen banana adds both sweetness and creaminess to smoothie recipes, which is why I love including it.
  • Unsweetened Coconut Flakes – The unsweetened coconut flakes add a ton of coconut flavor to this smoothie recipe. But don’t worry, they don’t overpower the pineapple flavor.
  • Nut Milk – The nut milk acts as a source of liquid to aid blending. It also adds creaminess to the smoothie.
  • Coconut Whipped Cream – The coconut whipped cream serves as the key topping for this pineapple coconut smoothie recipe. It adds sweetness and creaminess to the smoothie. And I mean, who doesn’t love whipped cream on top of their smoothie (or any treat for that matter)?

Ingredients
  

  • 1 cup frozen pineapple
