Good morning friends! Today I am sharing yet another oatmeal recipe. I recently bought a three-pound bag of apples, and I knew that I needed to put them to good use. While I do have a few apple flavored oatmeal recipes on the blog already, I don’t have an apple cinnamon overnight oats recipe.

So, I figured I would share my simple and delicious apple cinnamon overnight oats recipe with all of you :). This is one of my go-to recipes for busy workdays. I actually just made it this past Sunday so that it would be prepped and ready to eat on Monday.

One thing I love about overnight oats is that you don’t have to bake them. You simply prepare your jar of oatmeal, pop it in the fridge overnight to set, and then you have a quick and easy breakfast to enjoy in the morning. I typically get up at 5 – 6 AM on workdays, so having a breakfast prepped and ready to enjoy is absolutely crucial.

Now, let’s discuss some quick things to note for this recipe as well as the short and sweet list of ingredients you will need to make this recipe a smashing success!


Are Overnight Oats Good?

Overnight oats are most definitely good (at least in my opinion). I love the creamy consistency and texture of overnight oats. It is super unique and different than traditional hot oatmeal. While overnight oats might not be for everyone, I am a huge fan of them. I think many people would argue that overnight oats are absolutely amazing.


Do overnight oats expand?

Overnight oats do expand. The oats and chia seeds absorb the liquid, so the oat mixture tends to expand overnight while it is resting in the refrigerator. I try to leave a bit of space at the top of my mason jar for this reason.


Do overnight oats have to be in a mason jar?

Overnight oats do not need to be stored in a mason jar. However, I do find that some sort of airtight container is best for storage. This ensures that no odors from the fridge are absorbed by the overnight oats while they are resting. An airtight seal helps keep the oats fresh and flavorful. That’s why I like to use a mason jar to store my overnight oats in.

Apple Cinnamon Overnight Oats – Ingredients

  • Quick Oats – The first ingredient you will need for this recipe is, of course, the quick oats. If you want this recipe to be gluten free, use your favorite gluten free oats.
  • Fresh Apple – The fresh apple should come as no surprise. It adds natural sweetness, flavor, and texture to this apple cinnamon overnight oats recipe. You can use whichever kind you like best or have on hand. I used a gala apple on the day I took the recipe photos, but I have also used pink lady and honeycrisp apple varieties for this recipe. All of them turned out delicious.
  • Chia Seeds – The chia seeds add plant based nutrients to this recipe. They also help everything bind together. Plus, they absorb some of the liquid. They are a really important ingredient in all of my overnight oats recipes, and this one is no exception.
  • Ground Cinnamon – The ground cinnamon adds that classic cinnamon flavor to the oatmeal. It is an essential spice that you definitely don’t want to forget.
  • Nut Milk – The nut milk acts as the key source of liquid for this recipe. You can use whichever nut milk you have on hand or enjoy most. I used unsweetened vanilla almond milk.
  • Pure Maple Syrup – The pure maple syrup adds sweetness to this recipe as well as dimension and flavor. It is especially delicious when paired with fresh apple pieces. This makes it the perfect add-in. You can also add more maple syrup to taste as a topping when you’re ready to eat your overnight oats.
  • Creamy Peanut Butter – In my opinion, no oatmeal recipe is complete without some peanut butter drizzled on top. This ingredient adds richness and flavor to the overnight oats. It will be added on top when you’re ready to eat your oatmeal. Of course, you can easily omit this ingredient if desired.

Ingredients
  

  • 1/2 cup quick oats
  • 1/3 cup fresh chopped apple (plus more for topping)
  • 1 tsp chia seeds
  • 1/4 tsp ground cinnamon
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1/2 tbsp pure maple syrup
  • 1 tbsp creamy peanut butter (for topping)

Instructions
 

  • Add the oats, cinnamon, nut milk, chia seeds, and pure maple syrup to a bowl and mix to combine thoroughly.
  • Gently fold in the chopped apple.
  • Transfer the mixture to an airtight container (I used a mason jar) and pop it in the fridge overnight to set.
  • Pop the oats in the fridge overnight to set.
  • When you're ready to eat the oatmeal, top it off with the creamy peanut butter, more chopped apple pieces, and a drizzle of pure maple syrup.
