Good morning friends! Today’s recipe is a simple and delicious roasted red potatoes recipe. These red potatoes are seasoned and baked in the oven until golden brown. You can make them soft or bake them longer for a crispier texture.

The flavor is absolutely incredible even though the potatoes only need to be seasoned with a few key spices. This potato recipe is insanely easy and it is the perfect one to serve up with your favorite veggie burger or on top of your favorite salad.

Are Red Potatoes Good For Fries?

Red potatoes are absolutely perfect for making homemade French fries, oven baked potato wedges, and more. They are a super tasty potato variety. I like to leave the red potato skins on and bake them as they are.

You can use a wide variety of potatoes for fries, including gold potatoes, russet potatoes, red potatoes, baby potatoes, etc. However, for this recipe, we are using red potatoes.

Additionally, you can cut your fries into whatever shape you want. You could do traditional matchstick fries, curly fries, or potato wedges, which is what we are going to do today. I find that wedges are super quick and easy to cut up.


Is It Necessary To Boil Potatoes Before Roasting?

With this recipe, we will be roasting the potatoes at high heat for a long period of time. They get nice and soft (you could also make them cripsy on the outside if that is the texture you are going for). I did not boil my potatoes beforehand for this recipe, so that makes it a lot simpler!

When I make mashed potatoes, I always boil the potatoes first. However, when I make roasted/oven baked potatoes, I never boil them beforehand. I simply chop them up, season them, throw them on a pan, and then bake them in the oven at high heat.


Why Are My Wedges Not Crispy?

I really enjoy my potatoes nice and soft on the inside and golden brown on the outside. I don’t necessarily need mine to be crispy on the outside, which is why I put a 40 minute bake time for this recipe. If you want your potatoes crispier, you will either have to increase the bake time or the temperature at which you roast your potatoes.

No matter what texture you are going for, you always want to watch them closely so that they don’t burn. The size of your wedges could also impact the bake time. If you cut your potatoes up especially small, they might crisp up more quickly.

Ingredients
  

  • 2 cups red potatoes (chopped into wedges)
  • 2 – 3 tsp extra virgin olive oil
  • 1/4 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • salt (to taste)
  • pepper (to taste)
  • fresh chives (optional, for garnish)

Instructions
 

  • Preheat the oven to 350°F.
  • Wash and chop two cups of red potatoes into wedges
  • Place the potato wedges in a large mixing bowl.
  • Add the olive oil and mix with the potatoes to coat them evenly.
  • Add the cumin, garlic powder, onion powder, paprika, and salt + pepper to taste.
  • Use clean hands to mix and coat the potatoes evenly in the spices.
