Good morning friends! Today’s recipe is a super fun one. I was craving something peanut butter and chocolate chip flavored for dessert last week, so I decided to make a peanut butter chocolate chip cookie cake in celebration of my mom’s birthday. However, this is not just any cookie cake. I used my Wilton Olaf snowman cookie pan to make my cookie cake in the shape of a snowman, which is perfect for the winter time.
Luckily, you don’t need to have a snowman cookie pan to make this recipe. You can simply use any shallow pan to make your cookie cake in. However, I had to jump at the opportunity to utilize my snowman cookie pan since I don’t use it very often.

- Old Fashioned Rolled Oats – The main base we will be using for this cookie cake is rolled oats. This allows for the recipe to be completely gluten free (if you use gluten free rolled oats) and super budget friendly. We will be blending our oats up to form a fine oat flour.
- Chocolate Chips – The chocolate chips add a source of sweetness as well as the chocolate decadence to this recipe. I used a combination of both dark chocolate and semi-sweet chips. They combine perfectly with the peanut butter to form a peanut butter chocolate flavor combo that is absolutely incredible.
- Baking Soda – The baking soda acts as the key leavening agent for this recipe to help the cookie cake achieve a fluffier consistency. This is an ingredient you definitely don’t want to forget.
- Pure Maple Syrup – The pure maple syrup acts as the main source of sweetness for this recipe. It is an essential part of many of my baked goods.

Easy Vegan Snowman Cookie Cake
Ingredients
- 1 1/2 cups old fashioned rolled oats
- 2 tbsp vegan chocolate chips (I used a combo of mini semi-sweet chips and dark chocolate chunks)
- 1/4 tsp baking soda
- 3 tbsp pure maple syrup
- 2 tbsp creamy peanut butter
- 2 tbsp unsweetened applesauce
- 2 tbsp nut milk (I used unsweetened vanilla almond milk)
Instructions
- Preheat the oven to 350° F.
- Add all dry ingredients to a bowl, except the chocolate chips, and mix to combine.
- Make a well in the center of the bowl and add all liquid ingredients.
- Mix all liquid ingredients well to combine.
- Slowly mix the wet ingredients with the dry until a cookie dough forms.
- Gently fold in the chocolate chips.
- Press the cookie dough into a shallow pan of choice. I used my snowman cookie pan.
- Bake the cookie cake for about 15 minutes, or until the edges are slightly golden brown.
- Remove the cookie cake from the pan carefully.
- Let the cookie cake cool completely (once cool, you could also pipe the edges of the cookie cake with vegan frosting if desired).
- Dig in and enjoy!
