At this rate, my blog is on track to become the most oatmeal heavy food blog on the internet, but I think I’m ok with that.

As you guys already know, I love trying out new oatmeal flavor combinations and baking methods, and I really think I nailed the flavors and texture with this one. Making baked oatmeal for one is actually much easier than you might think. You simply measure out one serving and bake it in a small dish, such as an oven safe ramekin.

The bake time is usually around 20 to 25 minutes depending on the recipe. The oatmeal turns out fresh, hot, fluffy, and cake-like in texture. I often prefer the single serve method over making a big oatmeal bake, because I like the taste of fresh oatmeal better than reheating leftovers from a large oatmeal bake.


What Is Apple Pie Baked Oatmeal?

Apple pie baked oatmeal is essentially a mix of apple, oats, and spices. This makes the flavor very reminiscent of traditional apple pie. The texture is more cake-like, but the flavor profile is incredible, especially with the sweetness of the baked apple pieces.

If you want to make this recipe gluten free, use your favorite gluten free oats.
  • Fresh Apple – The next ingredient you need for this apple pie baked oats recipe is part of a freshly chopped apple. I used a small honeycrisp apple, but you can use whichever kind you like best.
  • Baking Powder – The baking powder acts as the key leavening agent for this recipe. It ensures that the oatmeal rises like a cake and achieves a nice, fluffy texture. It is a necessary ingredient that you definitely do not want to forget.
  • Cinnamon – The cinnamon is the key spice we will use in this recipe to achieve that classic apple cinnamon flavor. A little bit goes a long way.
  • Water – The water is the necessary liquid that will help all the ingredients come together to form a nice and smooth oatmeal batter. You could also use nut milk, such as unsweetened vanilla almond milk.

If desired, you can also add a little bit of pure maple syrup to the oatmeal batter itself for extra sweetness. I personally prefer to just drizzle the syrup on top of the oatmeal once it finishes baking, but it’s really up to you and your personal preference.

Ingredients
  

  • 1/2 cup quick oats
  • 1/4 – 1/3 cup fresh chopped apple (I used honeycrisp)
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/2 cup water
  • 1 tbsp creamy peanut butter
  • pure maple syrup (to taste)

Instructions
 

  • Preheat the oven to 350° F.
  • Add the oats, baking powder, cinnamon, water, and optional bit of pure maple syrup (for extra sweetness) to a high speed blender or food processor.
  • Blend for a few minutes until a smooth oatmeal batter consistency is achieved.
  • Gently fold in the chopped apple.
  • Pour the mixture into an oven safe dish or ramekin.
  • Top the mixture with more apple pieces.
  • Bake for about 20 – 25 minutes, or until your desired consistency is achieved.
