Good morning friends! Today I am back with a new oatmeal recipe. This is an overnight oats recipe packed with sweetness and flavor. I made birthday cake overnight oats by using about ten simple ingredients.
Now, I know that not everyone likes overnight oats, but I personally really enjoy them. The thick and creamy texture is absolute perfection. But what makes these overnight oats “birthday cake” flavored? Well, this recipe starts with a sweet oatmeal base that includes banana and pure maple syrup. However, it is the addition of rainbow sprinkles and vanilla protein powder which combine to give this oatmeal recipe a true “vanilla birthday cake” flavor. Plus, the protein powder helps the consistency come out ultra creamy.
I also topped my birthday cake overnight oats off with more rainbow sprinkles and some creamy peanut butter. If you want to make your overnight oats even sweeter, you can add another drizzle of pure maple syrup on top.

Vegan Vanilla Birthday Cake Protein Overnight Oats
Ingredients
- 1/2 cup quick oats
- 1/2 small ripe banana (mashed)
- 1 tbsp vegan vanilla protein powder (I used Orgain Simple in the creamy vanilla flavor)
- 1/2 tbsp rainbow sprinkles (plus more for topping)
- 1 tsp chia seeds
- 1/2 cup + 2 tbsp nut milk
- 1 tbsp creamy peanut butter
- 1/2 tbsp pure maple syrup (plus more for topping)
- vegan whipped cream (for topping)
Instructions
- Add the oats, chia seeds, and vanilla protein powder to a large mixing bowl.
- Mix to combine thoroughly.
- Add in the mashed banana, nut milk, and pure maple syrup, and mix again.
- Gently mix in the rainbow sprinkles.
- Transfer the mixture to a mason jar and screw the lid on tightly.
- Place the mixture in the refrigerator overnight to set.
- When you're ready to eat your oats, transfer them to a serving dish.
- Top your oats with the peanut butter, vegan whipped cream, more rainbow sprinkles, and more pure maple syrup if desired.
