Ingredients
  

  • 1/2 cup quick oats
  • 1/2 small ripe banana (mashed)
  • 1 tbsp vegan vanilla protein powder (I used Orgain Simple in the creamy vanilla flavor)
  • 1/2 tbsp rainbow sprinkles (plus more for topping)
  • 1 tsp chia seeds
  • 1/2 cup + 2 tbsp nut milk
  • 1 tbsp creamy peanut butter
  • 1/2 tbsp pure maple syrup (plus more for topping)
  • vegan whipped cream (for topping)

Instructions
 

  • Add the oats, chia seeds, and vanilla protein powder to a large mixing bowl.
  • Mix to combine thoroughly.
  • Add in the mashed banana, nut milk, and pure maple syrup, and mix again.
  • Gently mix in the rainbow sprinkles.
  • Transfer the mixture to a mason jar and screw the lid on tightly.
  • Place the mixture in the refrigerator overnight to set.
  • When you're ready to eat your oats, transfer them to a serving dish.

  • Top your oats with the peanut butter, vegan whipped cream, more rainbow sprinkles, and more pure maple syrup if desired.
