After tasting the delicious s’mores oatmeal I made last week, I decided to try my hand at making some vegan s’mores pancakes. And let me tell you, they turned out absolutely perfect.

These s’mores pancakes are packed with chocolate chip and marshmallow flavors, so I think you guys will really enjoy this recipe. Plus, the pancakes are gluten free friendly since I used oats for the base.

I wanted to write a quick note about vegan marshmallows. Marshmallows are not inherently vegan because most contain gelatin. However, there are some marshmallows which do not contain gelatin. A great place to check for vegan marshmallows is Whole Foods. They sell a brand called Dandies which makes vegan marshmallows. Trader Joe’s also releases mini marshmallows that do not contain gelatin, although I am pretty sure they are seasonal and only available during the late fall and winter months. In the past, the Trader Joe’s ones have been vegan and gluten free. Of course, always make sure to check your packaging in case they decide to change up the formula. The marshmallows are the perfect filling for these s’mores pancakes because they add gooeyness and sweetness to each and every bite.

Now that we have discussed where to purchase vegan miniature marshmallows, I think it is time to dive into the ingredients list for this delicious s’mores pancake recipe.


Vegan S’mores Oatmeal Pancakes – Ingredients

  • Rolled or Quick Cooking Oats – The first ingredient you will need for this recipe is, of course, the rolled or quick cooking oats. If you want this recipe to be gluten free, make sure to use your favorite gluten free oats. The oats will be blended into a fine oat flour to serve as the dry base for this recipe.
  • Baking Powder – The baking powder acts as a leavening agent to help the pancakes turn out light and fluffy. It is an essential ingredient that you definitely don’t want to forget it.
  • Water – The next ingredient you will need for this recipe is the source of liquid. For this recipe, I decided to go with water. The water will help transform your oat mixture into a smooth and creamy pancake batter.
  • Unsweetened Applesauce – The next ingredient you will need for this recipe is the unsweetened applesauce. This ingredient adds moisture and sweetness to the pancake batter. It is a simple ingredient that really enhances the flavor and texture of the pancakes.
  • Vegan Mini Marshmallows – The vegan mini marshmallows are a key ingredient in classic s’mores, and these s’mores pancakes are no exception. The vegan mini marshmallows will be added to the pancake batter along with the chocolate chips. As they cook on the griddle, they will melt to form the perfect gooey texture. Ingredients
  

  • 1/2 cup quick oats (blended into a fine oat flour)
  • 1/4 tsp baking powder
  • 2 tbsp mini vegan marshmallows
  • 1 tbsp semi-sweet chocolate chips
  • 1/4 cup + 2 tbsp water
  • 2 tbsp unsweetened applesauce
  • pure maple syrup to tate (for topping)

Instructions
 

  • Add the oat flour and baking powder to a mixing bowl and mix to combine thoroughly.
  • Mix in the water and applesauce until combined (don't overmix).
  • Gently fold in the marshmallows and chocolate chips.
  • Pour dollops of batter onto a greased pan or pancake griddle.
  • Cook the pancakes for a few minutes on each side until golden brown.
  • Plate the pancakes.
