Ingredients
  

  • 1/2 cup quick oats (blended into a fine oat flour)
  • 1/4 tsp baking powder
  • 2 tbsp mini vegan marshmallows
  • 1 tbsp semi-sweet chocolate chips
  • 1/4 cup + 2 tbsp water
  • 2 tbsp unsweetened applesauce
  • pure maple syrup to tate (for topping)

Instructions
 

  • Add the oat flour and baking powder to a mixing bowl and mix to combine thoroughly.
  • Mix in the water and applesauce until combined (don't overmix).
  • Gently fold in the marshmallows and chocolate chips.
  • Pour dollops of batter onto a greased pan or pancake griddle.
  • Cook the pancakes for a few minutes on each side until golden brown.
  • Plate the pancakes.
