Ingredients
1/2
cup
quick oats
(blended into a fine oat flour)
1/4
tsp
baking powder
2
tbsp
mini vegan marshmallows
1
tbsp
semi-sweet chocolate chips
1/4 cup
+ 2 tbsp
water
2
tbsp
unsweetened applesauce
pure maple syrup to tate
(for topping)
Instructions
Add the oat flour and baking powder to a mixing bowl and mix to combine thoroughly.
Mix in the water and applesauce until combined (don't overmix).
Gently fold in the marshmallows and chocolate chips.
Pour dollops of batter onto a greased pan or pancake griddle.
Cook the pancakes for a few minutes on each side until golden brown.
Plate the pancakes.
Drizzle on pure maple syrup to taste.
Dig in and enjoy!
