Good morning everyone! For today’s recipe, I am sharing a quick and simple one pan vegetable and quinoa bake. This meal comes together very quickly. You simply have to chop up all the vegetables, throw everything in a pan, add your water, and bake until everything is fully cooked.


Quinoa serves as the main base for this recipe, and it is an awesome superfood packed with protein and nutrients. I love using quinoa in place of brown rice in some of my savory recipes to switch up the flavors and nutrient profiles.


Now, let’s go ahead and dive into my tips and tricks as well as the ingredients you will need to make this vegetable and quinoa bake recipe a success.


How To Cook Quinoa So It Tastes Good

One of the most common questions surrounding quinoa is how to cook it and actually make it taste good. Many people are aware of the health benefits of quinoa, but they simply do not know how to cook it properly for optimal texture and flavor. So, I am going to share a few quick do’s and don’t’s when it comes to cooking quinoa.

Do’s:

  • Do make sure your quinoa is fully cooked, soft and fluffy, and all the water is absorbed. If you don’t cook your quinoa long enough, it will still be hard and crunchy, which is not what you want.

  • Do use vegetables and seasonings for additional flavor and texture. Seasonings can transform any dish, and quinoa dishes are no exception.

Don’t’s:

  • Don’t try to eat quinoa plain, especially not the first time you make it. Much like rice, oats, etc., quinoa isn’t especially flavorful on its own. You really need to add seasonings and spices to it in order to make it taste incredible. I also enjoy drizzling a bit of olive oil on my quinoa dish once it is done cooking for even more flavor.

  • Don’t ignore the package directions on your quinoa. Use the directions as a rule of thumb for how long to cook your quinoa, as well as the quinoa to water ratio.

Ingredients
  

  • 1 cup garbanzo beans (drained and rinsed)
  • 1 cup spinach (loosely packed)
  • 1/2 cup dry quinoa
  • 1/2 medium green bell pepper
  • 1/2 medium yellow onion
  • 1 clove minced garlic
  • 1/2 tbsp nutritional yeast seasoning
  • 1/4 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • a few dashes black pepper
  • 1 cup water

Instructions
 

  • Preheat the oven to 350° F.
  • Add the quinoa, yellow onion, green bell pepper, spinach, garlic, and water to a baking pan.
  • Mix all ingredients to combine.
  • Add all seasonings, except the nutritional yeast, and mix again.
  • Place the quinoa mixture in the oven to bake for 40 minutes.
  • Transfer the quinoa bake to a serving dish, then add the garbanzo beans.
  • Sprinkle on the nutritional yeast seasoning.
