Easy One Pan Mexican Quinoa

Good morning everyone! Today, I am sharing a super simple recipe with all of you – one pan Mexican quinoa. I love to make this recipe when I’m in the mood to cook something easy that doesn’t require a lot of prep work. Plus, this recipe requires very little cleanup, because as the name implies, you only need one pan to make it. You simply add everything to a pan, cook it up, and it is ready to garnish, serve, and enjoy! Anyway, enough on that. Let’s go through a few quick things to note for this recipe. Then, we will dive into the full list of ingredients you will need to make this easy vegan one pan Mexican quinoa recipe.


How Do You Cook Quinoa?

I cook quinoa much like I would cook rice, pasta, etc. Normally, I’ll add one part quinoa to a pot with two parts water. Then, I will bring the mixture to a boil, turn the heat to low, and simmer it partially covered until the water is absorbed and the quinoa is fluffy. I will add a bit more water as necessary to ensure it achieves a nice and fluffy texture. However, for this recipe specifically, I use a slightly different approach. I add all the ingredients together in a large pan. That way, all of the veggies will cook down while the quinoa cooks and absorbs the liquid (which in this case is the vegetable broth). Regardless, you will end up with a fluffy quinoa dish that is packed with flavor. Now that we have covered a few quick things to note for this recipe, let’s go through the list of ingredients you will need to make this one pan quinoa a smashing success!


Easy One Pan Mexican Quinoa – Ingredients

  • Quinoa – The first ingredient you will need for this recipe is the quinoa. You can use whichever vareity you like. I decided to use tri-color quinoa because I love the beautiful colors that it adds to this dish. Of course, white quinoa will also work. Honestly, I don’t taste much of a difference between the white and tri-color quinoa. So, it’s really up to you to choose whichever variety you enjoy most.
  • Black Beans – Black beans are another key ingredient that will be used in this one pan Mexican quinoa dish. You will want to use canned black beans that you have drained and rinsed thoroughly. Of course, you could also cook up some dry beans from scratch. However, I like to use canned beans to cut down on the prep work.
  • Fire Roasted Diced Tomatoes – The fire roasted diced tomatoes are another essential ingredient used in this recipe. They add a ton of depth of flavor to the dish. Of course, you could also use regular diced tomatoes in this quinoa dish. However, I think the fire roasted tomatoes give the dish a little something extra.
  • Frozen Corn – Frozen corn is yet another key ingredient that you will need for this one pan Mexican quinoa. The corn adds flavor, sweetness, and color to this recipe. It pairs really nicely with all of the other ingredients present in this dish, especially the black beans and diced tomatoes.
  • Green Bell Pepper – The green bell pepper adds a ton of flavor, texture, and a bit of extra sweetness to this dish. As the quinoa mixture cooks, the green bell pepper gets nice and soft.
  • Nutritional Yeast Seasoning – The nutritional yeast is the first essential seasoning used in this recipe. It adds a slight nutty/cheesy flavor to the dish. It also provides a source of vitamin B12. Overall, this seasoning compliments the dish quite nicely.
  • Garlic Powder – The garlic powder is a key spice which adds a ton of flavor to this dish.
  • Black Pepper – The black pepper provides this quinoa dish with even more spice.
  • Salt – This ingredient will be added to taste for even more flavor.
  • Vegetable Broth – The vegetable broth is the main source of liquid used in this recipe. The quinoa will soak up all of the delicious flavors present in the vegetable broth as it cooks.
  • Avocado – The fresh avocado adds richness and a source of fat to this dish. It is the perfect topping for this one pan Mexican quinoa recipe.
  • Fresh Lime Juice – The fresh lime juice provides the quinoa with even more depth of flavor. It is a simple yet powerful ingredient that I highly recommend you finish this recipe off with.

Ingredients
  

  • 1 cup quinoa (I used tri-color quinoa)
  • 1 can black beans (1 can = 15.25 oz, drained and rinsed)
  • 1 1/2 cups fire roasted diced tomatoes
  • 1 cup frozen sweet corn
  • 1/3 cup green bell pepper (finely chopped)
  • 1 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • salt to taste
  • 1 cup vegetable broth
  • fresh avocado (for topping)
  • freshly squeezed lime juice (for topping)

Instructions
 

  • Add all of the ingredients to a large pan and mix together well to combine.
    Pre Cooking
  • Bring the mixture to a boil on the stovetop, then immediately turn the heat to low and cover the pan with a lid.
  • Simmer the quinoa mixture over low heat for about 15 minutes, or until the quinoa is soft and has soaked up most of the liquid.
  • Remove the quinoa mixture from heat and let it cool for a bit.
  • Add salt to taste, then transfer the mixture into serving bowls.
  • Top the quinoa dish with some avocado and freshly squeezed lime juice.
