Single Serve Double Chocolate Baked Oatmeal
Ingredients
- 1/2 cup rolled oats
- 1/2 tsp cocoa powder (I used Hershey's special dark)
- 1/4 tsp baking powder
- 1 tbsp chocolate chips
- 1/2 cup nut milk (I used unsweetened vanilla almond milk)
- 1 tbsp unsweetened applesauce (can sub mashed banana)
- 1 tbsp creamy peanut butter (for topping)
- 1/2 tbsp pure maple syrup (plus more for topping)
Instructions
- Preheat the oven to 350° F.
- Add the oats, cocoa powder, baking powder, applesauce, pure maple syrup, and nut milk to a high speed blender or food processor.
- Blend until a smooth consistency is achieved.
- Gently fold in the chocolate chips, reserving some to top your oatmeal with.
- Pour the oatmeal mixture into an oven safe dish or ramekin.
- Top the oatmeal with the remaining chocolate chips.
- Bake for about 25 minutes, or until your desired consistency is achieved.
- Drizzle on the creamy peanut butter and more pure maple syrup to taste.
