Vegan Baked Chocolate Chip Donuts
Good morning everyone! Today, I am so excited to share an easy chocolate chip baked donuts recipe. This recipe is vegan, gluten free friendly, and baked in the oven. It requires no yeast, but the donuts still turn out incredibly fluffy thanks to the baking powder and baking soda. These donuts are perfect treat to eat for breakfast or dessert. These donuts are super cakey and surprisingly easy to make. Now, let’s go over a few quick things to note for this recipe. Then, we will dive into the full list of ingredients you will need to make these delicious baked chocolate chip donuts.
How To Make Baked Donuts Without Yeast and Eggs
It is actually quite easy to make baked donuts without yeast and eggs that still turn out fluffy, moist, and delicious. The best method I have found is to use a silicone donut pan so that the donuts slide out easily when they’re done baking, along with two key leavening agents to achieve a light and fluffy texture – baking powder and baking soda. The baking powder and baking soda help the donuts rise without the use of yeast. On top of that, applesauce is used for moisture.
I personally have made many different baked donut recipes without yeast or eggs, and the donuts still turn out absolutely delicious. The silicone donut pan I use has fairly deep cavities, which allows them to get nice and fluffy. Now, enough on that. Let’s dive into the full list of ingredients you will need to make these vegan chocolate chip baked donuts.
Vegan Chocolate Chip Baked Donuts – Ingredients
- Quick Oats – The quick oats are the first essential ingredient you will need for this recipe. They will be blended up to form a fine oat flour. Alternatively, you could blend up rolled oats to make the oat flour. To make this recipe gluten free, make sure to use your favorite gluten free oats.
- Coconut Flour – The next ingredient you will need for this recipe is the coconut flour. This ingredient combines perfectly with the oat flour to form the bulk of the dry base for this vegan donut recipe.
- Coconut Sugar – The coconut sugar adds some sweetness and flavor to this recipe.
- Baking Powder – The baking powder is the first key leavening agent used in this recipe to help the chocolate chip donuts achieve a light and fluffy texture as they bake.
- Baking Soda – The baking soda acts as the second essential leavening agent used in this recipe to help the donuts rise and turn out nice and fluffy.
- Cinnamon – The cinnamon adds some spice and depth of flavor to this donut recipe.
- Nut Milk – The nut milk acts as the main source of liquid for this recipe. It helps turn the dry mixture into a smooth donut batter. I chose to use unsweetened almond milk for this recipe, but you can use whichever kind you have on hand or enjoy most.
- Unsweetened Applesauce – The unsweetened applesauce adds a ton of moisture to these vegan baked donuts. It also adds some extra sweetness to this recipe.
- Creamy Peanut Butter – The creamy peanut butter adds richness and extra flavor to this donut recipe. I like to use a natural creamy peanut butter because the natural kind tends to have a more drizzly consistency. This consistency helps the peanut butter mix into the donut batter more easily.
- Pure Maple Syrup – The pure maple syrup adds a little bit more sweetness to the donut batter. It is one of my favorite ingredients to use in vegan baked goods, and this one is no exception.
- Mini Semi-Sweet Chocolate Chips – The final ingredient you will need for these vegan baked donuts is, of course, the mini chocolate chips. The mini chocolate chips add a ton of sweetness and rich chocolate flavor to these vegan baked chocolate chip donuts.
