Good morning everyone! Today, I am so excited to share my simple yet delicious double chocolate chip muffin recipe that I have been making on repeat recently. These double chocolate chip peanut butter banana muffins are packed with flavor, moisture, sweetness, and nutrients. This recipe is the perfect one to meal prep so that you have delicious muffins to snack on all throughout the week.

This muffin recipe is also super simple. It requires less than ten ingredients, yet the muffins still turn out super chocolatey, rich, and decadent. Muffins are one of my absolute favorite treats to bake, and these double chocolate chip banana ones are certainly no exception. Anyway, enough on that. Let’s go through some quick things to note for this recipe. Then, we will dive into the list of ingredients you will need to make these easy vegan double chocolate chip peanut butter banana muffins.


How Do You Make Vegan Double Chocolate Muffins?

In order to make vegan double chocolate muffins, I start off with a simple base of oat flour and cocoa powder. While you can buy oat flour at the grocery store, I like to make my own by blending up rolled oats for about 10 – 15 seconds until a fine oat flour forms. I find that this is the most cost effective option for me personally. Plus, oat flour is super quick and easy to make, so I don’t mind taking a few minutes to make it myself.

As far as the other key ingredients go, most of them are similar to traditional chocolate muffins. However, instead of using dairy products, I use a non-dairy milk. Then, I add mashed banana for moisture and sweetness. There are also a few other key ingredients you will need for this vegan double chocolate muffin recipe specifically. We will discuss the entire list of ingredients for this recipe in the next section.


Double Chocolate Chip Peanut Butter Banana Muffins – Ingredients

  • Rolled Oats – The first ingredient you will need for this recipe are the rolled oats. The rolled oats will be blended up to form a fine oat flour. This ingredient will serve as the bulk of the dry base for these muffins. I like to make my own oat flour by blending up rolled oats for about ten seconds.
  • Cocoa Powder – The cocoa powder is another key ingredient that you will need for this recipe. This ingredient helps to create the rich chocolate flavor that we are going for with these double chocolate chip muffins. Of course, the chocolate chips will add even more flavor and sweetness.
  • Baking Powder – The baking powder is one the key leavening agents used in this recipe. It helps the muffins rise and achieve a fluffier texture.
  • Baking Soda – The baking soda is yet another essential leavening agent which is used to help these muffins rise to achieve the perfect fluffy muffin texture
  • Overripe Bananas – Another essential ingredient that you will need for this recipe are the ripe or overripe bananas. You will be mashing this ingredient up and adding it to your muffin batter. The bananas add moisture and natural sweetness to these delicious vegan muffins.
  • Pure Maple Syrup – The pure maple syrup acts as the key source of liquid sweetness for these double chocolate chip banana muffins. It is one of my favorite sweeteners to use in baked goods, and this muffin recipe is no excetion.
  • Creamy Peanut Butter – The peanut butter is yet another key ingredient which adds flavor, richness, and moisture to these vegan muffins. I find that the natural kind works best, as it tends to have a more drizzly consistency which is easier to mix into the muffin batter. You can easily sub another nut or seed butter if you prefer.
  • Nut Milk – The next ingredient you will need for this recipe is the nut milk. I used unsweetened vanilla almond milk, but you can use whichever kind you have on hand or prefer.
  • Semi-Sweet Chocolate Chips – The vegan semi-sweet chocolate chips are the final key ingredient which adds sweetness and rich chocolate flavor to your vegan muffins. I used mini semi-sweet chocolate chips, but you can use whichever kind you have on hand. However, I will say that semi-sweet chocolate chips will give the muffins more sweetness than dark chocolate chips.

Ingredients
  

  • 1 cup rolled oats (blended into a fine oat flour)
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 1/2 overripe bananas (mashed)
  • 1/2 cup + 2 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 2 tbsp creamy peanut butter
  • 1 tbsp pure maple syrup
  • 1/4 cup semi-sweet chocolate chips

Instructions
 

  • Preheat the oven to 350° F.
  • Add all dry ingredients, except the chocolate chips, to a large mixing bowl.
  • Mix all dry ingredients well to combine.
  • Make a well in the center of the bowl, then add the wet ingredients.
  • Mix the wet ingredients thoroughly to combine, then slowly mix the wet ingredients into the dry to form a smooth muffin batter.
  • Gently fold in 3 tbsp of the chocolate chips.
  • Evenly distribute the batter between six cavities of a lined or greased muffin pan.
  • Use the remaining one tbsp of chocolate chips to top the muffins off with.
  • Bake the muffins for about 30 minutes, or until a toothpick inserted comes out clean.
  • Let the muffins cool for a bit before removing them from the pan.
  • Dig in and enjoy!
