Double Chocolate Chip Peanut Butter Banana Muffins

The best easy vegan double chocolate chip peanut butter banana muffins.

Ingredients
  

  • 1 cup rolled oats (blended into a fine oat flour)
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 1/2 overripe bananas (mashed)
  • 1/2 cup + 2 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 2 tbsp creamy peanut butter
  • 1 tbsp pure maple syrup
  • 1/4 cup semi-sweet chocolate chips

Instructions
 

  • Preheat the oven to 350° F.
  • Add all dry ingredients, except the chocolate chips, to a large mixing bowl.
  • Mix all dry ingredients well to combine.
  • Make a well in the center of the bowl, then add the wet ingredients.
  • Mix the wet ingredients thoroughly to combine, then slowly mix the wet ingredients into the dry to form a smooth muffin batter.
  • Gently fold in 3 tbsp of the chocolate chips.
  • Evenly distribute the batter between six cavities of a lined or greased muffin pan.
  • Use the remaining one tbsp of chocolate chips to top the muffins off with.
  • Bake the muffins for about 30 minutes, or until a toothpick inserted comes out clean.
  • Let the muffins cool for a bit before removing them from the pan.
  • Dig in and enjoy!
