- 1/3 cup quick oats (blended into a fine oat flour)
- 2 tbsp chocolate protein powder (I used Orgain Simple in the chocolate peanut butter cup flavor)
- 1/2 tsp rainbow sprinkles
- 1/4 tsp baking powder
- 1/4 cup nut milk (I used unsweetened vanilla almond milk)
- 1 tbsp unsweetened applesauce
- 1 tbsp creamy peanut butter (for topping)
- pure maple syrup to taste
Preheat the oven to 350° F.
Combine the oat flour, baking powder, and chocolate protein powder in a mixing bowl.
Add the applesauce and nut milk, then mix again until well combined.
Pour the mixture into an oven safe dish or ramekin.
Top the oatmeal mixture with the rainbow sprinkles.
Bake the oatmeal for about 20 minutes, or until a toothpick inserted comes out clean.
Top your baked oats with the peanut butter and pure maple syrup to taste.
