1/4overripe banana(mashed)
1/2tbspunsweetened applesauce
1tspground flaxseed
1/4tspcinnamon
2 1/2tbspnut milk(I used unsweetened original almond milk)
1/2tsppure maple syrup
1tbspnut butter(for topping, I used peanut butter)
powdered sugar(optional, for topping)
Instructions
Preheat the oven to 350° F.
Tear/cut bread up into small square pieces.
In a large mixing bowl, whisk together all other ingredients.
Add bread to mixture and coat evenly.
Pour the French toast casserole mixture into a small square/rectangular pan and spread out evenly into a SINGLE layer. (If you don't do a single layer, the casserole will end up super mushy!)
Bake the French toast casserole for about 25 minutes, or until firm and golden brown.
Enjoy fresh and warm with your favorite toppings, like peanut butter, pure maple syrup, coco whip, or powdered sugar.
