Now, let’s take a look at some quick things to note for this recipe. Then, we will dive into the list of ingredients you’ll need to whip up these incredible vegan pumpkin chocolate chip pancakes.
How To Make Vegan And Gluten Free Pumpkin Pancakes
There are a few important things to note before you attempt to make pumpkin pancakes that are vegan and/or gluten free. First off, to make vegan pancakes, you have to make sure to include a few key ingredients. One essential ingredient is the binding agent. This could be a flax egg, chia seeds, mashed banana, etc. For this recipe specifically, the combination of oat flour, canned pumpkin, and unsweetened applesauce provides the perfect balance of both dry and wet ingredients to create a smooth pumpkin pancake batter that sticks together nicely, tastes delicious, has enough moisture, and doesn’t turn out dense or gummy.
In regards to making pancakes that are gluten free, it is important to choose either a gluten free flour or another alternative. For this recipe, I blended up quick oats to form an oat flour. If you want this pancake to be gluten free, use your favorite gluten free oats to make your oat flour.
Now that we have gone through some quick things to note for this recipe, let’s take a look at the list of ingredients you will need to make this pumpkin chocolate chip pancakes recipe a smashing success.
Pumpkin Chocolate Chip Pancakes – Ingredients
- Quick Cook Oats – The quick cooking oats are the first ingredient you will need for this recipe. They will be blended up to form a fine oat flour, which will serve as the dry base for this recipe. If you want to make your pancakes gluten free, make sure to use your favorite gluten free oats.
- Mini Semi-Sweet Chocolate Chips – The miniature semi-sweet chocolate chips add sweetness and rich chocolate flavor to every single pancake bite. You can add whichever brand of chocolate chips you like. I really love the Enjoy Life brand mini semi-sweet chocolate chips.
- Baking Powder – The baking powder is the key leavening agent used in this recipe. It ensures that your pancakes achieve a lighter, fluffier texture.
- Spices – The spices are absolutely essential to add a strong pumpkin flavor to your pancakes. For this recipe, you will use both ground cinnamon and pumpkin pie spice.
- Nut Milk – The nut milk adds creaminess as well as a source of liquid to this recipe. I used unsweetened vanilla almond milk, but you can use whichever kind of nut milk you prefer or have on hand.
- Canned Pumpkin – This ingredient should come as no surprise. After all, you can’t make a pumpkin recipe without the canned pumpkin. It adds color, moisture, and pumpkin flavor to your pancakes.
- Unsweetened Applesauce – The applesauce adds even more moisture to the pancakes, along with some natural sweetness.
- Creamy Peanut Butter – The creamy peanut butter serves as the perfect topping for these pumpkin chocolate chip pancakes. You can easily sub another nut or seed butter in place of the peanut butter if desired.
- Pure Maple Syrup – A little bit of pure maple syrup is the finishing touch for any stack of pancakes, and these pumpkin chocolate chip pancakes are no exception. This ingredient will be drizzled on top of your pancakes to taste once they are finished cooking. The maple syrup adds sweetness and moisture to your pancakes.
