Good morning everyone! I am writing this blog post on December 12, 2020, which is the day before my 24th birthday. I made these delicious chocolate muffins to enjoy with my family for my birthday tomorrow, and I am grateful that I get to celebrate with my mom, dad, and my little sister this year. As 2020 nears its end, I am starting to reflect on all the trials and triumphs this year has brought me.

I am excited to begin this new chapter of my life, and I think one of the best things I got out of 2020 was some extra time to focus on my hobbies and passions that I have neglected for too long, including cooking and baking :). This blog is something that I plan to continue to grow. I honestly can’t believe that thousands of people visit my blog every single month to make my healthy vegan recipes.

So, I want to take a moment to thank all of you for making and sharing my recipes. I truly do appreciate every single one of you, and I am grateful that we get to connect virtually through our shared love of vegan food :). I started this blog with the goal of providing people free access to plant-based recipes. My goal is to help the animals and the planet in any way that I can, and this blog has given me a means to do exactly that. Hopefully, you have found these recipes inspiring and delicious.

Best Vegan Chocolate Muffins – Ingredients

  • Oat Flour – The oat flour acts as a key part of the base for this moist vegan chocolate muffins recipe. As per usual, I just blended up some old fashioned rolled oats in my NutriBullet for about 10 – 15 seconds until a fine oat flour formed. If you want to make this recipe gluten free, make sure to use your favorite gluten free rolled oats.
  • Cocoa Powder – Of course, you can’t have chocolate muffins without the cocoa powder. This ingredient is essential for almost any chocolate baked good, and these vegan chocolate muffins are no exception.
  • Baking Powder – The baking powder acts as one of the key leavening agents in this recipe. It is absolutely necessary to make these muffins nice and fluffy.
  • Baking Soda – The baking soda is the other leavening agent which helps these muffins rise a bit and prevents this from turning out too dense.
  • Unsweetened Applesauce – The unsweetened applesauce adds some necessary moisture to this recipe. It also provides the muffins with some natural sweetness.
  • Creamy Peanut Butter – The creamy peanut butter adds richness, moisture, and flavor to these vegan chocolate muffins. It also helps the muffins stick together. This ingredient is absolutely essential. However, you can sub another nut or seed butter if you prefer.
  • Nut Milk – The nut milk adds creaminess and moisture to this recipe. I used unsweetened vanilla almond milk, but you can use whichever kind you prefer or have on hand.
  • Pure Maple Syrup – The pure maple syrup adds a lot of sweetness to these muffins. It also adds a sticky texture to help the muffin batter come together nicely. It is one of my favorite sweeteners to use in baked goods.
  • Chocolate Chips – The chocolate chips add extra sweetness and rich chocolate flavor to these vegan muffins. You can use whichever kind you like. I used some dark chocolate chunks which I chopped up into smaller pieces.

Ingredients
  

  • 1 cup rolled oats (blended into a fine oat flour)
  • 2 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup unsweetened applesauce
  • 3 1/2 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 2 1/2 tbsp pure maple syrup
  • 2 tbsp creamy peanut butter
  • 2 tbsp chocolate chips (plus more for topping)

Instructions
 

  • Preheat the oven to 350° F.
  • In a large mixing bowl, combine the oat flour, cocoa powder, baking powder, and baking soda.
  • Make a well in the center of the bowl, then add the nut milk, applesauce, peanut butter, and pure maple syrup
  • Mix the wet ingredients well to combine.
  • Mix the wet ingredients into the dry to form a smooth muffin batter.
  • Gently fold in the chocolate chips.
  • Evenly distribute the batter between six cavities of a lined or greased muffin pan.
  • Add a few chocolate chips on top of each muffin.
  • Bake the muffins for about 30 minutes, or until a toothpick inserted comes out clean.
  • Let the muffins cool completely before removing them from the pan.
