Good morning everyone! It has been quite some time since I have posted a pancake recipe on the blog. As you guys know, I absolutely love pancakes. I especially enjoy making them on the weekends because I have a lot more time to cook and bake.

The recipe I’m sharing today is my new favorite pancake recipe – vegan vanilla birthday cake pancakes. These pancakes are super fluffy, sweet, and delicious. I even added protein powder to increase the protein content and give the pancakes that classic vanilla cake flavor. I am super happy with how they turned out, so I just had to share the recipe.

An important thing to note is that if you decide to use a different protein powder than I did (I used the Orgain Simple protein powder in the creamy vanilla flavor), you might have to adjust the amount of liquid to get the correct pancake batter consistency.

All protein powders absorb liquid differently, and you don’t want to end up with a pancake batter that is too thick or too thin. I suggest adding the liquid gradually until you end up with a batter that drips slowly off the spoon. Now that we’ve covered that, let’s take a look at some quick things to note. Then, we will jump into the list of ingredients you will need to make this pancake recipe.


How To Make Protein Pancakes

The steps to making protein pancakes are actually quite simple. I want to go over them quickly in case some of you have not made protein pancakes before.

Step 1 – Choose your flour. The first step is to choose which flour you want to use for your pancakes. For this recipe, I used oat flour. Pancake mix, all purpose flour, etc. are also commonly used for protein pancakes.
Step 2 – Choose your protein powder. The next step is to choose your protein powder. Make sure it is one that you like the taste of.
Step 3 – Add all other base ingredients. The third step is to add all other base ingredients and any desired add-ins.
Step 4 – Cook your pancakes. The next step is to cook your protein pancakes just as you would traditional pancakes.
Step 5 – Add your toppings. The final step is to add desired toppings, such as nut butter and pure maple syrup.

And it really is as simple as that. Basically, you make protein pancakes just like you would traditional pancakes, with the exception being that some protein powder is added to the batter. Now that we have gone over how to make protein pancakes, let’s take a look at the list of ingredients you will need for these vanilla birthday cake protein pancakes.

  • Quick Oats – The first key ingredient you will need for this pancake recipe is quick oats. The oats are blended into a fine oat flour to use as one of the dry base ingredients.
  • Vegan Vanilla Protein Powder – The protein powder adds vanilla flavor, sweetness, and protein to this pancake recipe. I used the Orgain Simple protein powder in the creamy vanilla flavor.
  • Rainbow Sprinkles – The rainbow sprinkles add color and sweetness to this recipe.
  • Baking Powder – The baking powder acts as the essential leavening agent for this recipe. It helps ensure that the pancakes achieve a fluffy texture.
  • Nut Milk – The nut milk is used to transform the mixture into a pancake batter. It also adds creaminess to the recipe. I used unsweetened vanilla almond milk, but you can use whatever nut milk you have on hand or enjoy most.
  • Unsweetened Applesauce – The unsweetened applesauce adds moisture to this pancake recipe.
  • Creamy Peanut Butter – The creamy peanut butter adds a ton of flavor and richness to this pancake recipe. It is used as a topping for the pancakes. You can easily sub another nut/seed butter if desired.
  • Pure Maple Syrup – This ingredient is drizzled on top of the pancakes for additional sweetness and flavor. You can add this ingredient to taste.
  • Vegan Whipped Cream – This ingredient adds even more sweetness to the pancakes. It is an optional ingredient, but I highly recommend it. The vegan whipped cream will also be added to taste.

Ingredients
  

  • 1/4 cup + 2 tbsp quick oats (blended into a fine oat flour)
  • 2 1/2 tbsp vanilla protein powder (I used Orgain Simple creamy vanilla protein powder)
  • 2 tsp rainbow sprinkles (I used Simple Truth Organic)
  • 1/4 tsp baking powder
  • 1/4 cup + 2 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1 tbsp unsweetened applesauce
  • 1 tbsp creamy peanut butter (for topping)
  • pure maple syrup (to taste)
  • vegan whipped cream (optional, to taste)

Instructions
 

  • Combine the oat flour, protein powder, and baking powder in a large mixing bowl.
  • Add the applesauce and nut milk, and mix again.
  • Gently fold in the rainbow sprinkles.
  • Pour dollops of batter onto a greased pan or pancake griddle.
  • Cook the pancakes for a few minutes on each side until golden brown.
  • Plate your pancakes.
  • Add the peanut butter, pure maple syrup, vegan whipped cream, and more rainbow sprinkles.
