Good morning everyone! Today, I am so excited to share my creamy vegan pumpkin pie banana ice cream recipe! It may be cold outside, but that doesn’t mean you can’t enjoy a chilly, creamy, fall themed treat. After all, pumpkin is one of my absolute favorite flavors, and I can’t wait until fall rolls around each year to enjoy it. I like to eat pumpkin flavored foods all year round. I actually include it in some of my recipes every single month.

This recipe specifically is quick, easy, tasty, and simple. It requires only a few ingredients, it is incredibly creamy, and it has the perfect amount of sweetness from the banana. The chocolate chips also give it extra flavor, sweetness, and a bit of crunch. If you enjoy pumpkin flavored treats, you will love this recipe.

I actually tested this recipe quite a few times to determine the perfect amount of cinnamon and pumpkin pie spice to use. Once I achieved the perfect pumpkin flavor and consistency, I knew it was ready to share here on the blog. Luckily, I always keep multiple cans of pumpkin in my cupboard for recipe testing. So, there was absolutely no way I was going to run out of pumpkin while testing this dessert. Fortunately, I didn’t even need to get into my pantry stash, as this recipe only requires a little bit of canned pumpkin.

With this recipe specifically, we will rely on the canned pumpkin as our source of moisture/liquid to help everything blend together. If we were to use a non-dairy milk, it would thin down the consistency and turn into a smoothie. Since we are going for that ultra thick and creamy texture, the combination of frozen banana chunks and canned pumpkin does the trick.

Ingredients
  

  • 1 medium ripe banana (frozen in chunks)
  • 2 tbsp canned pumpkin
  • 1/2 tbsp semi-sweet chocolate chips (I used Enjoy Life minis)
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp cinnamon

Instructions
 

  • Add all ingredients, except the chocolate chips, to a high speed blender or food processor.
  • Process for a few minutes until a smooth and creamy consistency is achieved, stopping to move the banana chunks around and scrape down the sides as necessary.
  • Transfer the ice cream mixture to a serving dish.
  • Add the chocolate chips.
  • Dig in and enjoy!
