Homemade Vegan Pumpkin Banana Ice Cream

The creamiest vegan pumpkin pie banana ice cream made with just a few simple ingredients.

Ingredients
  

  • 1 medium ripe banana (frozen in chunks)
  • 2 tbsp canned pumpkin
  • 1/2 tbsp semi-sweet chocolate chips (I used Enjoy Life minis)
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp cinnamon

Instructions
 

  • Add all ingredients, except the chocolate chips, to a high speed blender or food processor.
  • Process for a few minutes until a smooth and creamy consistency is achieved, stopping to move the banana chunks around and scrape down the sides as necessary.
  • Transfer the ice cream mixture to a serving dish.
  • Add the chocolate chips.
  • Dig in and enjoy!
