Good morning everyone! Last week, I was in the mood for a sweet potato based dish, but I didn’t want to go with my usual baked sweet potato topped with hummus, avocado, and salsa. Instead, I wanted to make something a bit more unique. So, I opted for a plate of my delicious sweet potato nachos. This recipe is one of my favorites so I knew I had to share it on the blog.

Plus, I have been sharing a ton of desserts and sweeter recipes in general lately. So, I thought it was time to post another savory meal. While I do love munching on my snacks throughout the day and ending the night with a sweet treat, I also enjoy my soups, salads, and other savory dishes. Anyway, enough on that. Let’s go over some quick things to note for this recipe. Then, we will dive into the list of ingredients you’ll need to make this sweet potato nachos recipe a smashing success.


Which Potatoes Should I Use for Sweet Potato Nachos?

While this recipe uses traditional sweet potatoes, you can use any sweet potato variety that you’d like for sweet potato nachos. One of my personal favorite variations are Murasaki sweet potatoes. I typically buy them by the bag from Trader Joe’s. They have a purple exterior, white interior, and a really unique flavor.

They taste great in all kinds of different recipes, and these sweet potato nachos are no exception. So, feel free to use any sweet potato variety that you prefer for the base of these vegan sweet potato nachos.

Now that we have covered a bit about the sweet potatoes, let’s take a look at all the ingredients you will need to make the sweet potato nachos.


Loaded Vegan Sweet Potato Nachos – Ingredients

  • Sweet Potato – The first ingredient you will need for this recipe is your sweet potato of choice. After all, you can’t make sweet potato nachos without a sweet potato. We will be cutting the sweet potato into thin slices to make the “chips”.
  • Black Beans – The black beans are the next essential ingredient you will need for this recipe. The black beans add flavor as well as a source of plant based protein and carbs to this dish.
  • Avocado – The avocado adds richness, flavor, and a source of healthy fat to this recipe. It’s the perfect addition to any savory dish. I often eat my cooked sweet potatoes with avocado on top, so I had to include this ingredient in my sweet potato nachos recipe.
  • Yellow Onion – The yellow onion is another key ingredient you will need for this recipe. It adds some sweetness, flavor, and crunch to the sweet potato nachos. It is one of my favorite aromatic vegetables, and it is easy to use in a wide variety of savory dishes.
  • Lime Juice – Freshly squeezed lime juice adds a ton of flavor and dimension to this recipe. You can use pre-packaged lime juice if you’d like, but I prefer fresh lime juice.
  • Nutritional Yeast Seasoning – The nutritional yeast seasoning adds a great source of vitamin B-12 to this dish. It also provides the sweet potato nachos with a subtle nutty/cheesy flavor.
  • Vegan Cheddar Cheese Shreds – You will also want some vegan cheese for this recipe, since you can’t have nachos without some sort of melted cheese. I used some store bought vegan cheddar cheese shreds, and they melted really nicely. Of course, you could also make your own vegan cheese sauce, like the one I’ve shared in my cheesy fries recipe.
  • Jalapeño Pepper – The jalapeño pepper adds some spice and heat to these sweet potato nachos. If you don’t like spicy food, you can easily omit this ingredient.
  • Salt and Pepper – These ingredients will be added on top for a bit of extra flavor. You can adjust them to your own personal taste. I like a little bit of salt and pepper on top of my sweet potato nachos, but you can add as much or as little as you’d like.

Ingredients
  

  • 1 medium sweet potato
  • 1/2 cup black beans (drained and rinsed)
  • 1 tbsp yellow onion (finely chopped)
  • 1/2 small jalapeño pepper (thinly sliced)
  • 1/4 medium avocado (cubed)
  • 1 tbsp vegan cheddar cheese shreds (I used Simple Truth Organic)
  • 1 tsp nutritional yeast seasoning
  • 1 tsp lime juice (freshly squeezed)
  • salt to taste
  • pepper to taste

Instructions
 

  • Preheat the oven to 400° F.
  • Slice the sweet potato thinly.
  • Place the sweet potato slices in a single layer on a lined or greased baking sheet.

  • Add salt and pepper to taste.
  • Bake the sweet potato slices for about 20 minutes, or until soft.
  • Transfer the sweet potato slices to a plate.
  • Add the black beans, yellow onion, jalapeño pepper slices, and nutritional yeast seasoning.
  • Sprinkle the vegan cheese shreds on top of the nachos.
    Nachos Before Melting
  • Microwave the nachos for about 20 seconds, or until the vegan cheese has melted.
  • Top the nachos with the avocado and lime juice.
