Smashed Oven Roasted Potatoes

Good morning everyone! Today, I will be sharing my delicious smashed potatoes recipe. This recipe is quick and easy to make, and the potatoes turn out soft and flavorful. For this recipe, I used some baby gold potatoes that I had on hand. However, you can use whichever color of baby potaotes you enjoy most. Just make sure they are baby potatoes, not normal sized ones.

I personally love to use the gold potatoes for this smashed potato recipe, as the flavor of them pairs really well with the other ingredients used in this recipe. However, I have also made this recipe with purple baby potatoes, and they turned out wonderful as well. Anyway, enough on that. Let’s go through a few quick things to note for this recipe. Then, we will dive into the list of ingredients you will need to make these baby potatoes.


How To Make Smashed Potatoes in the Oven

The steps to making smashed potatoes in the oven are actually very simple. First, you will poke some holes in each of your baby medley potatoes with a fork. Then, you will line the potatoes up on a baking sheet and drizzle some olive oil on top of them. You will add salt and pepper to taste, and then bake the potatoes for about 15 – 20 minutes. After that, you will cut them in hal and place each potato half face up.

Next, you will bake the potatoes for another 5 – 10 minutes, or until they are soft on the inside. You will then flip the potato halves over so that they are face down on the baking sheet. You will smash them down with a fork, and add your desired toppings. I used paprika and cilantro. Finally, you can add a bit more salt and pepper to taste. Then, your oven baked smashed potatoes will be ready to enjoy! Now that we’ve covered that, let’s go through the full list of ingredients you will need to make this tasty smashed potatoes recipe.


Smashed Oven Roasted Potatoes – Ingredients

  • Baby Medley Potatoes – The first key ingredient you will need for this recipe is a bag of baby potatoes. The potatoes I use are baby gold potatoes. You can purchase these by the bag at most grocery stores, and they typically come in a variety of colors such as gold, purple, and red. I personally really enjoy the gold potatoes, but you can use any variety of baby potatoes that you’d like.
  • Salt – The salt is the first key ingredient which you will add to taste.
  • Pepper – The pepper is another ingredient which you will add to taste to season your potatoes with. This ingredient, much like the salt, adds extra flavor to your potatoes.
  • Olive Oil – The next ingredient you will need for this recipe is the olive oil. I used a garlic flavored olive oil that I purchased from Trader Joe’s. The olive oil adds a ton of flavor to the potatoes, and it also helps keep them from drying out.
  • Dipping Sauce – Another ingredient that you will want for this recipe is some sort of dipping sauce for your smashed potatoes. A few of my favorite options include ketchup, hummus, and mashed avocado. You can even make your own homemade hummus from scratch to dip your potatoes in if you’d like.
  • Herb of Choice- The herb is an optional ingredient that you can garnish your smashed potatoes with once they are done baking. It adds some flavor as well as a beautiful pop of green color to the dish. You can either use some chives or cilantro, depending on which one you prefer and what you have on hand. If you don’t like either of those, you could also use a vegetable such as some chopped green onion.
  • Paprika – Paprika is another spice which will add color and flavor to this recipe. It is an optional ingredient which you can sprinkle on top of your smashed potatoes once they are done baking.

Ingredients
  

  • 9 baby medley potatoes
  • salt to taste
  • pepper to taste
  • 1/2 tbsp extra virgin olive oil (I used Trader Joe's garlic olive oil)
  • 2 tbsp dipping sauce of choice (I like ketchup, hummus, or mashed avocado)
  • 1 tbsp herb of choice (chives or cilantro will work) (optional, for garnish)
  • a few dashes paprika (optional, for garnish)

Instructions
 

  • Preheat the oven to 350° F.
  • Poke some holes in each baby potato with a fork.
  • Place the potatoes in a single layer on a lined or greased baking sheet.
  • Drizzle the olive oil on top of the potatoes.
  • Add salt and pepper to taste.
  • Bake the potatoes for 15 minutes.
  • Pull the potatoes out of the oven and cut each one in half. Be careful as the potatoes and pan will be extremely hot! I left my oven mitt on to hold each potato with while I cut it in half.
  • Place the potato halves face up on the baking sheet.
  • Pop the potatoes back into the oven to bake for another 5 – 10 minutes, or until they are nice and soft on the inside.
  • Let the potatoes cool for a bit, then flip them over so they are face down on the baking sheet.
  • Smash the top of each potato down with a fork.
  • Plate the smashed potatoes.
