- 1 medium sweet potato
- 1/2 cup black beans (drained and rinsed)
- 1 tbsp yellow onion (finely chopped)
- 1/2 small jalapeño pepper (thinly sliced)
- 1/4 medium avocado (cubed)
- 1 tbsp vegan cheddar cheese shreds (I used Simple Truth Organic)
- 1 tsp nutritional yeast seasoning
- 1 tsp lime juice (freshly squeezed)
- salt to taste
- pepper to taste
Preheat the oven to 400° F.
Slice the sweet potato thinly.
Place the sweet potato slices in a single layer on a lined or greased baking sheet.
Add salt and pepper to taste.
Bake the sweet potato slices for about 20 minutes, or until soft.
Transfer the sweet potato slices to a plate.
Add the black beans, yellow onion, jalapeño pepper slices, and nutritional yeast seasoning.
Sprinkle the vegan cheese shreds on top of the nachos.
Microwave the nachos for about 20 seconds, or until the vegan cheese has melted.
Top the nachos with the avocado and lime juice.
