- 1/2 cup + 2 tbsp rolled oats
- 1 tbsp vegan chocolate protein powder (I used Orgain creamy chocolate fudge)
- 1/2 tbsp coconut sugar
- 1/2 tsp cocoa powder (I used Hershey's special dark)
- 3 tbsp creamy peanut butter
- 1 1/2 tbsp pure maple syrup
In a small mixing bowl, combine the oats, protein powder, coconut sugar, and cocoa powder.
Add in the peanut butter and maple syrup and mix again to combine thoroughly.
Roll the dough into eight equal sized spheres and place them on a parchment lined dish or baking sheet.
Refrigerate the cookies for about an hour, or until chilled and firm.
