Ingredients
  

  • 1 cup quick oats (blended into a fine oat flour)
  • 3 tbsp vegan vanilla protein powder (I used Orgain Simple in the creamy vanilla flavor)
  • 2 tsp rainbow sprinkles (I used Simple Truth Organic)
  • 1/4 cup nut milk (I used unsweetened vanilla)
  • 2 tbsp creamy peanut butter
  • 2 tbsp pure maple syrup

Instructions
 

  • Combine the oat flour, vanilla protein powder, and rainbow sprinkles in a large mixing bowl.
  • Add the nut milk, peanut butter, and pure maple syrup, then mix again until well combined.
  • Roll the dough into twelve spheres and place them in a container.
  • Refrigerate the energy bites for about one hour to allow them to chill and set.
  • Enjoy the energy bites immediately or store them in the refrigerator for a quick and easy snack.
