Crispy Baked Zucchini Fries

Good morning and welcome back to the blog everyone! I hope you all are having an awesome morning. I am so excited to share today’s recipe with you all. This recipe is one I’ve been making for years, and it’s one that I always keep in my rotation.

When I was in high school, I definitely didn’t cook or bake every day like I do now. I was always busy with school, sports (I ran cross-country and track and also played basketball), and homework. So, there wasn’t a lot of time for anything else.

However, I distinctly remember making a baked zucchini fry recipe for my entire family one night as a quick and healthy snack. It was a huge hit. We devoured the pan in a matter of minutes, and it became a staple in my school lunches for months straight. Thus, I knew that I had to share this recipe with you all on the blog.

This recipe has definitely evolved since then. I think my original recipe had like three or four ingredients, and while it was delicious, my new and improved version is even better. I’ve added and tweaked ingredients over the years and eventually ended up with the perfect mix of flavors. This snack is incredibly easy, and I love to meal prep a couple pans to have throughout the week.

Don’t get me wrong, I love my baked French fries and my baked sweet potato fries, but sometimes it’s nice to go for an alternative. The baked zucchini fries do the trick. So, let’s take a look at some of the ingredients that make up these crunchy, crispy fries.


Healthy Crispy Baked Zucchini Fries – Ingredients

  • Zucchinis – Ok, this ingredient is pretty obvious. It’s essential that you get a couple of fresh zucchinis for this recipe.

    My favorite place to get zucchinis is from the local farmer’s market. They always taste so much fresher and tastier. However, that isn’t always feasible. So, if you don’t have access to a farmer’s market, you’ll have to settle for some standard grocery store zucchinis. Either way, this is the main ingredient you will need for this recipe.
  • Bread Crumbs – I love to make my own by toasting some whole wheat bread and grinding it up in a NutriBullet blender, which is what I did for this recipe today.

    When you use this method, you’re able to choose whichever bread you’d like. This can really make the recipe even healthier because you can use your favorite whole wheat bread.

    You could even bake your own bread, then toast it up and grind it into bread crumbs. Although, that would be a pretty time intensive process. However, I’m sure it would turn out incredible. No matter which method you choose, make sure you have some bread crumbs for this recipe.
  • Nut Milk – I used unsweetened vanilla almond milk for this recipe. The nut milk gets the zucchinis wet enough so that the bread crumbs and seasonings stick to them.

    Therefore, this ingredient is an absolute necessity for the recipe. Regular unsweetened nut milk would probably work, but the vanilla flavor is what I had on hand, so that’s what I used.
  • Nutritional Yeast Seasoning – The nutritional yeast elevates the health content in this recipe by adding some vitamin B12. It also adds a delicious cheesy/nutty flavor, so it’s the perfect seasoning for this recipe.
  • Garlic and Onion Powder – These two spices work incredibly well with the nutritional yeast to flavor the zucchini fries well. I’m a huge seasoning person, so I always try to include a few key ones in my savory recipes to achieve a really flavorful meal or snack. These two spices work together to do exactly that.
  • Black Pepper – A little black pepper goes a long way here. It gives a little something extra to this recipe without overpowering it or making the fries super spicy. That’s not what we are going for with this recipe.

    Trust me, I’ve been in the situation where I added way too much pepper to my dishes. It’s not a place you want to end up in. So, using just a little bit ensures that the pepper doesn’t overpower this recipe, but rather, adds flavor to it.

Ingredients
  

  • 2 medium zucchinis
  • 3/4 cup bread crumbs (I made my own *see note)
  • 3 tbsp nutritional yeast
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • a few dashes black pepper (I used about 4 dashes)
  • 1/4 cup almond milk (I used unsweetened vanilla)

Instructions
 

Prep Work

  • Preheat oven to 400° F.
  • Chop ends off zucchinis, then cut them in half, and cut halves into small matchstick shapes. The thinner you make them, the crispier they will get.
  • Combine all dry ingredients in a large bowl.
    Bread Crumb Mixture

Coating the Fries

  • Dip each fry lightly in your bowl of almond milk, and then coat them in the bread crumb mixture using one of two methods.
  • You can either sprinkle the mixture on with a spoon, or roll the fries directly in the mixture. The rolling method will coat the fries more heavily, but you might lose a bit of the mixture at the end, as it will absorb some of the milk and get soggy at the bottom (so it won't stick to the fries).

Baking the Fries

  • Transfer your fries to a lined baking sheet.

  • Bake for about 30 – 35 mintues, or until your fries are nice and crispy. The larger your fries are, the longer they will take, so keep a close eye on them to make sure they don't burn.
  • Enjoy with your favorite dipping sauces, like mustard, ketchup, or even hummus!

*I made my own bread crumbs by toasting two slices of Nature’s Own 100% whole wheat bread and then blending the toast up into small crumbs in my NutriBullet Blender. You can make your own at home using the same method or you can use store bought bread crumbs.
