Good morning everyone! Today, I am sharing my very first veggie burger recipe on the blog. And let me tell you, it does not disappoint.
I don’t know about you guys, but veggie burgers are an absolute staple in my diet. I eat them almost every single week. I love having a veggie burger on a bun with lettuce, tomato, onion, ketchup, avocado, etc. It is such a quick and easy lunch or dinner option. I also love to make homemade baked French fries to go with my burgers.
The black bean and sweet potato veggie burger recipe that I am sharing today is also a really easy one to meal prep. The recipe yields about six burgers, which is just enough to last you a week. Best of all, veggie burgers are super versatile, so they can be used in many different ways.
For example, you could crumble a burger up and throw it in a salad. Or, you could eat it on a bun (this is my personal favorite option). You can dress your burger up with hummus, avocado, ketchup, tomato, onion, or whatever else you’d like. Another great thing about this veggie burger recipe in particular is that it requires very little prep work. Plus, the veggie burgers cook in less than 30 minutes.

Vegan Sweet Potato Black Bean Burgers
Ingredients
- 1 can black beans, drained and rinsed (1 can = 15.5 oz)
- 1/2 cup cooked and mashed sweet potato (tightly packed)
- 1/4 cup yellow onion (finely chopped)
- 1/4 cup fresh cilantro (finely chopped)
- 3 tbsp rolled or quick oats
- 2 tbsp nutritional yeast seasoning
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp dried oregano
- salt to taste
- 2 tbsp vegetable broth
Instructions
- Preheat the oven to 350° F.
- Add the black beans to a large mixing bowl.
- Mash the black beans, leaving some beans whole if desired.
- Add the mashed sweet potato, and mix well to combine.
- Mix in the nutritional yeast seasoning, cumin, garlic powder, dried oregano, and salt to taste.
- Add the quick oats, chopped onion, and chopped cilantro, then mix again.
- Add the vegetable broth and mix well to combine.
- Form the burger mixture into patties that are about 3 – 3.25 inches in diameter and 0.5 inches thick.
- Place the patties on a lined or greased baking sheet.
- Bake the burger patties for 10 minutes, flip them over, then bake them for another 10 minutes.
- Let the burgers cool for a bit, then dig in and enjoy them however you'd like!
