Vegan Creamy Savory Oatmeal Recipe

I hope you all have had a lovely start to your Thursday. But, if not, I can guarantee it’s about to get better. Today, I have a very unique recipe for you all that I know you will love. And no, it’s not a sweet recipe.

Today, I’m going to show you how to make savory oats. That’s right. We are talking about oatmeal packed with salsa, broccoli, and even avocado.

I know, it sounds weird. I was definitely a skeptic at first. Now, I love making savory oatmeal. Just think of the oatmeal as the base that you would typically use brown rice, quinoa, etc., for. Then, it doesn’t seem quite as weird. What I can tell you is that from the first bite, I could already tell that I loved this recipe. I created it using a few of my favorite things for optimal taste, texture, flavor, and nutritional benefits. In my opinion, this recipe is a winner.

I also had my dad taste it, and he too was pleasantly surprised. Whenever I tell anyone to try savory oats, they give me a weird look. But, nine times out of ten, once they try it, they’re hooked. So, let’s take a look at everything we need for this delicious oatmeal bowl that can be eaten as a savory breakfast, brunch, lunch, or even dinner!


Vegan Creamy Savory Oatmeal – Ingredients

  • Rolled Oats – Old fashioned rolled oats serve as the base for this tasty recipe. They are packed with nutrients, fiber, protein, and so much goodness. Oatmeal has always been one of my go to breakfasts, so I am super happy that I have found a way to incorporate it into savory meals that work for lunch and dinner as well.
  • Broccoli – You will want to steam it and finely chop it for this recipe so that it’s nice and soft. You can steam it in a pot with some water on the stove top. Or, you can try a quicker option (which is what I used) by steaming it in the microwave for about 90 seconds in a similar manner.
  • Salsa – The salsa adds a ton of flavor to this recipe. I think fresh is best, but if you don’t want to make fresh salsa, you can search your grocery store for some other options. I found a chunky mild pace salsa that had a pretty clean ingredients list, so I opted for that. I also think it’s super tasty. Plus, it’s inexpensive. So, if you are on the hunt for a new salsa, I’d recommend this one.
  • Water – I love a thick bowl of oatmeal. As a result, I generally choose to go lighter on the water. If you want to thin your bowl of oats down a bit, you can always add a little more water until your desired consistency is achieved.

    I haven’t tried any nut milks in this recipe, so I don’t know if they would taste good in place of water. But, if you try it out, feel free to leave a comment letting everyone know how it tastes.
  • Spices – You will want a dash of black pepper as well as garlic powder. These two spices add a little kick and extra flavor to this oatmeal bowl. Just a little bit of each is enough to take this oatmeal bowl to a whole new level.

    You also want some nutritional yeast. This seasoning is packed with vitamin B12 and also adds a cheesy/nutty flavor to the savory oatmeal, so I like to pile it on. It’s one of my favorite seasonings ever, so of course I had to include it in this recipe.
  • Avocado – The avocado is so important for this recipe, because it adds a ton of creaminess and richness to the savory oatmeal bowl. It also adds healthy fat and nutrients. The avocado is a powerful fruit (you can read more about its benefits here), so I love to include it in any recipe I can.

    And because avocados are more nutrient dense, this ingredient will also help keep you satisfied. We will be adding the avocado on top at the end, and it adds both a beautiful color and flavor to this oatmeal recipe.

Ingredients
  

  • 1/3 cup rolled oats
  • 1/3 cup steamed broccoli (finely chopped)
  • 1/2 avocado (chopped)
  • 2 tbsp chunky mild salsa (I used Pace)
  • 3 tbsp water
  • 1 tsp nutritional yeast
  • 1 dash garlic powder
  • 1 dash black pepper

Instructions
 

  • Steam broccoli in the microwave or on the stovetop in a pot of water until soft.
  • Chop broccoli into small pieces.
  • Mix together the oats, water, black pepper, garlic powder, salsa, steamed broccoli, and half of the nutritional yeast.
  • Transfer to a microwave safe dish.
  • Microwave for 90 seconds.
  • Top with chopped avocado and the rest of the nutritional yeast.
  • Enjoy warm!

For thinner oats, add a bit more water.
