I decided to switch up the base that I use for my typical vegan muffin recipes by using a combination of oat and bread flour.
The result was these absolutely delicious maple banana walnut muffins. This recipe has a subtle sweetness, which makes it the perfect breakfast option. Fluffy Maple Nut Banana Bread Muffins
Ingredients
- 1 1/2 cups quick cooking oats (blended into a fine oat flour)
- 1/2 cup bread flour
- 1/4 cup coconut sugar
- 3 tbsp walnuts (finely chopped)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup unsweetened applesauce
- 2 medium overripe banana
- 1/4 cup pure maple syrup
- 1 tbsp nut milk (I used unsweetened vanilla almond milk)
- 1/2 tsp pure vanilla extract
Instructions
- Preheat the oven to 350° F.
- Add the oat flour, bread flour, coconut sugar, baking powder, and baking soda to a large mixing bowl.
- Mix to combine thoroughly.
- Thoroughly mash the bananas.
- Make a well in the center of the mixing bowl, then add the mashed bananas, applesauce, maple syrup, nut milk, and pure vanilla extract.
- Mix the wet ingredients together, then slowly mix the wet ingredients into the dry to form a smooth muffin batter (don't overmix!).
- Line or grease 10 cavities of a muffin pan.
- Fill each cavity about 3/4 of the way full with the muffin batter.
- Evenly distribute the finely chopped walnuts on top of the muffin batter.
- Bake the muffins for for about 28 – 30 minutes, or until a toothpick inserted comes out clean.
- Dig in and enjoy!
