- 1 1/2 cups quick cooking oats (blended into a fine oat flour)
- 1/2 cup bread flour
- 1/4 cup coconut sugar
- 3 tbsp walnuts (finely chopped)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup unsweetened applesauce
- 2 medium overripe banana
- 1/4 cup pure maple syrup
- 1 tbsp nut milk (I used unsweetened vanilla almond milk)
- 1/2 tsp pure vanilla extract
Preheat the oven to 350° F.
Add the oat flour, bread flour, coconut sugar, baking powder, and baking soda to a large mixing bowl.
Mix to combine thoroughly.
Thoroughly mash the bananas.
Make a well in the center of the mixing bowl, then add the mashed bananas, applesauce, maple syrup, nut milk, and pure vanilla extract.
Mix the wet ingredients together, then slowly mix the wet ingredients into the dry to form a smooth muffin batter (don't overmix!).
Line or grease 10 cavities of a muffin pan.
Fill each cavity about 3/4 of the way full with the muffin batter.
Evenly distribute the finely chopped walnuts on top of the muffin batter.
Bake the muffins for for about 28 - 30 minutes, or until a toothpick inserted comes out clean.
