Easy Vegan Banana Fritters
Good morning everyone! I hope you all had a great Father’s Day! It’s an important day to recognize all of the amazing father figures in our lives that have helped shape us into the people we are today. My family celebrated my (vegan) dad with a taco bar for lunch and some sweet vegan treats.
I am also aware that this day can be hard for those who are missing a father from their lives, and I am keeping those people in my thoughts today. But no matter what day it is, it’s always a good time to show your loved ones how much they mean to you. While we certainly don’t need a special day to show appreciation for the people in our lives who we love and care about, a gentle reminder never hurts.
Now, enough about that. Let’s get into what you all are here for – today’s recipe. Today, I decided that it was time to share one of my tried and true recipes on the blog – my vegan banana fritters. I actually make these for my dad every single father’s day, and they certainly do not disappoint.
These vegan banana fritters are packed with an insane amount of flavor, and you can also customize the toppings however you’d like. My personal go-to toppings are powdered sugar and pure maple syrup for that extra sweetness. Anyways, let’s take a look at some quick things to note for this recipe. Then, we will take a deeper look at the list of ingredients you will need to make these simple and delicious vegan banana fritters.
What Are Banana Fritters Made Of?
Banana fritters can be made from a wide variety of ingredients. For this recipe specifically, I decided to cook the fritters on a griddle, which completely gets rid of the need to fry them in oil. In addition to that, I made mine completely vegan. So, I used ground flaxseed and water to create a simple flax egg. This helps the fritter batter hold together nicely as the fritters cook. The other ingredients are super simple and found in most banana fritter recipes, such as flour and banana.
Now that we’ve covered that, let’s take a look at the list of ingredients you will need to make this recipe a smashing success.
Easy Vegan Banana Fritters – Ingredients
- Ripe or Overripe Banana – This ingredient should come as no surprise. After all, you can’t have banana fritters without the banana. You want to make sure to use a ripe or overripe banana for this recipe to ensure that your banana fritters achieve the optimal sweetness. Bananas are especially tasty in recipes such as this one because they get caramelized and gooey when you heat them.
- Whole Wheat Pastry Flour – The flour is another essential ingredient you will need for this recipe. I used the Bob’s Red Mill brand of whole wheat pastry flour. This flour acts as the perfect thickening agent for your banana fritters batter. It helps ensure that your fritters turn out nice and golden brown, and don’t fall apart as they cook. A little bit goes a long way here.
- Ground Flaxseed – The ground flaxseed is another key ingredient for these banana fritters. It will be combined with the water to form a flax egg, which helps the batter come together. You can find this at most grocery stores, and the generic store brand is typically the cheapest option.
- Water – This ingredient will be combined with the ground flaxseed to make your vegan flax egg. If you don’t know what that is, don’t worry. I have included the steps required to make the flax egg within the recipe directions.
- Nut Milk – The nut milk adds moisture and creaminess to this recipe. I used unsweetened vanilla almond milk, but you can use whichever kind you have on hand or prefer.
- Pure Maple Syrup – The pure maple syrup adds a little bit of extra sweetness to the banana fritter batter. It also helps them hold together since it is quite sticky. This ingredient will also be added to taste on top of your banana fritters once they finish baking for even more sweetness.
- Powdered Sugar – The powdered sugar is the perfect finishing touch for this recipe. It adds even more sweetness to the banana fritters. It will be added to taste just like the maple syrup drizzle.
