Delicious vegan banana fritters that are sweet and easy to make.

- 1 large ripe or overripe banana
- 2 tbsp whole wheat pastry flour
- 1 tbsp ground flaxseed meal
- 3 tbsp water
- 1 tbsp nut milk (I used unsweetened vanilla almond milk)
- 1 tsp pure maple syrup (plus more for topping)
- powdered sugar (for topping)
In a small bowl, mix together the ground flaxseed meal and water. Set it aside for about 5 minutes to thicken (this will form your flax egg).
In a mixing bowl, thoroughly mash the banana.
Add the flax egg and pure maple syrup, and mix thoroughly to combine.
Add the flour and mix again.
Pour in the nut milk and mix again until batter is well combine.
Pour dollops of batter onto a greased pan or griddle over low heat.
Cook the banana fritters for a few minutes on each side until golden brown.
Drizzle on pure maple syrup to taste and a sprinkle of powdered sugar.
