Quick and Easy Vegan Stuffing

Good afternoon everyone! Today, I am so excited to share a quick and easy vegan stuffing recipe that is perfect to make as a Thanksgiving day side dish for all of your plant based friends and family. This recipe is super simple, because it utilizes vegan store bought stuffing mix, along with a few other key ingredients.

Aside from the stuffing mix itself, all you really need to make this vegan stuffing are a few vegetables and some vegetable broth. Of course, you can also serve this stuffing with optional toppings, such as vegan butter, for added flavor.

I love how easy this recipe is to make, especially since some of the other dishes I typically make for Thanksgiving are more complicated. If you’re making a number of dishes for Thanksgiving, you can easily get overwhelmed by all of the prep work you have to do to ensure that everything gets finished on time. I like to have at least a few dishes that require minimal prep work, and this vegan stuffing is one such dish.

Now, enough on that. Let’s go through all of the ingredients you will need to make this easy vegan stuffing for Thanksgiving (or for any other time the craving hits).


Quick and Easy Vegan Stuffing – Ingredients

  • Stuffing Mix – The first ingredient you will need for this recipe is the store bought stuffing mix. Using a store bought mix decreases the prep work required for this recipe. Plus, there are a surprising number of store bought mixes that are vegan. You can use whichever one you’d like. Just make sure to check the ingredients list on the package, as not all stuffing mixes are vegan.
  • Vegetable Broth – The vegetable broth is another key ingredient required for this recipe. It adds a ton of flavor and moisture to the stuffing. It containes delicious vegetable flavors as well as some salt, which pairs very nicely with the flavors and spices already present in the stuffing mix itself. Again, just like the stuffing mix, you can use whichever brand of vegetable broth you prefer.
  • Yellow Onion – Yellow onion is yet another essential ingredient for this vegan stuffing recipe. It adds a ton of flavor and texture to this recipe. It is one of my favorite ingredients to use in savory dishes, and this vegan stuffing is certainly no exception. You will be chopping it up finely to use in the stuffing.
  • Celery – Celery is another important vegetable that you will need for this recipe. The celery adds some flavor and texture to this dish. While I am not a huge fan of celery by itself, I do like it in certain dishes. This vegan stuffing is one such dish. I have also always liked ants on a log (ants on a log is essentially celery stalks coated in peanut butter and topped with raisins). I love the way that the textures and flavors blend in this simple snack. The point is, celery is another vegetable that you will need to make this vegan stuffing.
  • Baby Carrots – Carrots are another personal favorite vegetable of mine. I love dipping them in hummus for a quick and easy snack. For this recipe, they will be chopped up and added to the stuffing. They give this stuffing additional flavor, and they also brighten it up with a nice pop of orange color.
  • Toppings – Finally, there is an optional topping that you can serve with this vegan stuffing for even more flavor – vegan butter. Vegan butter melts right into the stuffing, so it is the perfect topping to include. You could add this directly on top of the stuffing when it is done (or close to done) baking. Or, you could simply place some vegan butter on the table so that your guests can add some on top of their stuffing, rolls, etc. themselves.

Ingredients
  

  • 1 package vegan stuffing mix (1 package = 12 oz)
  • 2 1/2 cups vegetable broth
  • 1 cup finely chopped onion
  • 1 cup finely chopped celery
  • 1/4 cup finely chopped baby carrots
  • optional vegan butter (for topping)

Instructions
 

  • Preheat the oven to 450° F.
  • In a large mixing bowl, combine the stuffing mix and vegetable broth. Let the mixture sit for a few minutes so that the bread crumbs can soak up the liquid.
  • Add in all of the veggies and mix well to combine.
  • Pour the stuffing mixture into a large greased loaf pan.
  • Cover the mixture with aluminum foil and bake it for 15 minutes.
  • Remove the foil and bake the stuffing for another 5-10 minutes, or until the top is golden brown.

  • Let the stuffing cool for a bit, then dig in and enjoy!
