Vegan Dark Chocolate Peanut Butter Cups

Peanut Butter Exterior
- 1/4 cup + 2 tbsp creamy peanut butter
- 1 tbsp melted coconut oil (measure after melting)
Chocolate Filling
- 2 tbsp dark chocolate
- 1 tsp melted coconut oil (measure after melting)
Line 12 cavities of a mini cupcake pan with liners.
Mix together the creamy peanut butter and 1 tbsp melted coconut oil until well combined.
Evenly distribute half of the peanut butter mixture between the 12 cupcake liners.
Microwave the dark chocolate chips with 1 tsp of melted coconut oil until a drizzly consistency is achieved, about 30 seconds.
Evenly distribute the melted chocolate between the 12 cupcake liners to fill the center of each peanut butter cup.
Distribute the remaining peanut butter mixture evenly between the 12 cups.
Freeze the chocolate peanut butter cups for at least 2 - 3 hours to allow them to harden and set.

*Note: These chocolate peanut butter cups melt very fast. I like to store them in the freezer and remove one just before I'm ready to eat it. That way, it will have a chance to thaw out a bit without completely melting.
