A delicious vegan stuffing made with a few simple ingredients.

- 1 package vegan stuffing mix (1 package = 12 oz)
- 2 1/2 cups vegetable broth
- 1 cup finely chopped onion
- 1 cup finely chopped celery
- 1/4 cup finely chopped baby carrots
- optional vegan butter (for topping)
Preheat the oven to 450° F.
In a large mixing bowl, combine the stuffing mix and vegetable broth. Let the mixture sit for a few minutes so that the bread crumbs can soak up the liquid.
Add in all of the veggies and mix well to combine.
Pour the stuffing mixture into a large greased loaf pan.
Cover the mixture with aluminum foil and bake it for 15 minutes.
Remove the foil and bake the stuffing for another 5-10 minutes, or until the top is golden brown.
Let the stuffing cool for a bit, then dig in and enjoy!
