Vegan Apple Cinnamon Mini Muffins

Good morning everyone! Today I have a super delicious recipe for you guys. These apple cinnamon mini muffins are so good that I literally gobbled down three of them before they even had time to fully cool! They are seriously so amazing. I hope you enjoy them as much as I do!

I have always loved apples. When I was younger, I used to eat an apple almost every day. It was my favorite fruit, and I loved the sweetness and crunch factor. At Thanksgiving, I always looked forward to the homemade apple pie that awaited me.

Then, around the end of middle school or beginning of high school, I had to get braces. My love for apples quickly faded. Not being able to bite into them like I used to just made them less appealing to me. I found a new favorite fruit for a while – bananas. And, I am just as obsessed with them today. But, once I got my braces off at the end of high school, I found my love of apples again.

Then, I went to college. I ate in the dining halls for almost every meal, so I didn’t have as many options when it came to picking my meals and snacks. But, the dining halls always had apples. I will admit that they were never as tasty as the ones from the grocery stores. However, I worked with what I had. When I finally moved off campus, I went back to buying apples whenever I wanted, and started cooking up yummy vegan recipes using my fresh apples that I had gotten.

Thus, the apple recipes continue today. So, let’s take a look at all of the ingredients that make up these simply sweet mini muffins.


Vegan Apple Cinnamon Mini Muffins – Ingredients

  • Apple – Because we are making mini muffins, we only need a small apple. It will be enough to fill each and every muffin with some fresh pieces of apple goodness.
  • Whole Wheat Flour – I used Bob’s Red Mill whole wheat flour. It is the perfect way to increase the nutritional and health benefits in these muffins, as opposed to using white flour that you might find in a typical muffin. I also added some oat flour for a nice balance.
  • Sweetener – I used Truvia baking blend, which combines some sugar and Truvia to decrease the overall added sugar.
  • Unsweetened Applesauce – After all, these are apple muffins. This applesauce will amplify the flavor and add some natural sweetness. You don’t need to get sweetened applesauce. I used unsweetened original.

    I remember that when I was younger, my mom used to pack the flavored applesauces for us. They had a lot of added sugar. But, that really wasn’t necessary because apples are so incredibly sweet and yummy on their own!
  • Cinnamon – Cinnamon is an amazing spice that I use regularly. I top it on my pancakes, waffles, oatmeal, peanut butter toast, and much more. It is perfect to use in sweet recipes of any and all kinds. And, the combination of apple and cinnamon is truly delicious.

    It may seem like a small, insignificant ingredient, but I would argue that it isn’t. Therefore, don’t omit this powerful little spice from this recipe. It might mess up the flavor.
  • Pure Vanilla Extract – Vanilla extract is used in baked goods to amplify all the flavors that we have already put in. It makes baked desserts taste perfect. I don’t know exactly how it works, but it is magical. I like to use it in a ton of my recipes, especially cakes, cupcakes, muffins, and of course, mini muffins.
  • Baking Powder – The baking powder is the leavening agent which helps these apple cinnamon mini muffins rise. Honestly, mini muffins are so small already that they don’t rise much. But, you don’t want them caving in either. This little powerful ingredient will prevent that. That way, you will have little fluffy muffins that are absolute perfection.
  • Water – The water is what finishes out this recipe. You need it to combine with all the other ingredients and form a nice batter.

Ingredients
  

  • 1/4 cup whole wheat pastry flour (I used Bob's Red Mill)
  • 1/4 cup oat flour
  • 1/4 cup peeled and finely chopped apple (I used an ambrosia gold apple)
  • 1/4 cup unsweetened applesauce
  • 1 tbsp Truvia cane sugar blend
  • 1/2 tsp cinnamon
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp baking powder
  • 3 1/2 tbsp water

Instructions
 

  • Preheat oven to 350° F.
  • Combine all dry ingredients, except for the chopped apple, in a mixing bowl.
  • Mix in the liquid ingredients.
  • Gently fold in the chopped apples.
  • Grease a mini muffin pan and fill each cavity with batter (these muffins don't rise much, so you can go ahead and fill them all the way to the top of the cavity).
  • Bake 15-20 minutes, or until a toothpick inserted comes out clean.
  • Enjoy!
