Apple Cinnamon Mini Muffins

Simple bite size snacks filled with apple cinnamon goodness.

- 1/4 cup whole wheat pastry flour (I used Bob's Red Mill)
- 1/4 cup oat flour
- 1/4 cup peeled and finely chopped apple (I used an ambrosia gold apple)
- 1/4 cup unsweetened applesauce
- 1 tbsp Truvia cane sugar blend
- 1/2 tsp cinnamon
- 1/2 tsp pure vanilla extract
- 1/4 tsp baking powder
- 3 1/2 tbsp water
Preheat oven to 350° F.
Combine all dry ingredients, except for the chopped apple, in a mixing bowl.
Mix in the liquid ingredients.
Gently fold in the chopped apples.
Grease a mini muffin pan and fill each cavity with batter (these muffins don't rise much, so you can go ahead and fill them all the way to the top of the cavity).
Bake 15-20 minutes, or until a toothpick inserted comes out clean.
