The best banana oat pancakes made with only three simple ingredients.

Ingredients
  

  • 1/2 cup quick oats
  • 1 small ripe banana
  • 1 flax egg
  • 3 - 4 tbsp water
  • peanut butter + pure maple syrup (for topping)

Instructions
 

  • Add the oats, 3/4 of the banana, the flax egg, and three tablespoons of water to a high speed blender or food processor.
  • Blend until all ingredients are well incorporated.
  • Add a bit more water as necessary to achieve a pancake batter consistency.
  • Pour dollops of batter onto a greased pan or pancake griddle.
  • Cook the pancakes for a few minutes on each side until golden brown.
  • Plate your pancakes, then top them off with the rest of the banana (sliced), creamy peanut butter, and pure maple syrup to taste.
  • Dig in and enjoy!
