Vegan Peanut Butter Fudge

Tasty vegan peanut butter fudge packed with nutrients and no refined sugar.

Ingredients
  

  • 3/4 cup mashed sweet potato
  • 1 overripe banana (mashed)
  • 1 tbsp unsweetened vanilla almond milk
  • 3 tbsp pure maple syrup
  • 4 1/2 tbsp creamy peanut butter
  • 3 tbsp powdered peanut butter

Instructions
 

  • Add all ingredients to a food processor or high speed blender.
  • Blend thoroughly.
  • Grease a rectangular pan (I used a mini loaf pan), then smooth mixture evenly into the pan.
  • Freeze for an hour or two until the fudge is firm.
  • Let thaw for a bit, cut into squares, then enjoy.
