Ingredients
  

  • 1/3 cup rolled oats
  • 1/2 medium ripe banana (sliced)
  • 2 tbsp blueberries
  • 1/2 tbsp chocolate chips
  • 1/8 tsp cinnamon
  • 1/8 tsp baking soda
  • 1/2 cup + 1 tbsp water
  • 1 tbsp creamy peanut butter
  • 1/4 tsp melted coconut oil (measure after melting)

Instructions
 

  • Add the oats, water, cinnamon, and baking soda to a high speed blender.
  • Blend until a smooth batter forms.
  • Pour the oatmeal batter onto a pancake griddle or greased pan over low to medium heat.
  • Cook the "pizza crust" oat pancake for a few minutes on each side, until firm and golden brown.
  • Plate the oat "pizza crust" and spread the peanut butter on top.
  • Add the sliced banana and blueberries.
  • In a small, microwave safe dish, melt the chocolate with the coconut oil for about 35-40 seconds to form a drizzly consistency.
