The perfect vegan fruit pizza with an oatmeal crust, fresh fruit, creamy peanut butter, and a decadent chocolate drizzle.

- 1/3 cup rolled oats
- 1/2 medium ripe banana (sliced)
- 2 tbsp blueberries
- 1/2 tbsp chocolate chips
- 1/8 tsp cinnamon
- 1/8 tsp baking soda
- 1/2 cup + 1 tbsp water
- 1 tbsp creamy peanut butter
- 1/4 tsp melted coconut oil (measure after melting)
Add the oats, water, cinnamon, and baking soda to a high speed blender.
Blend until a smooth batter forms.
Pour the oatmeal batter onto a pancake griddle or greased pan over low to medium heat.
Cook the "pizza crust" oat pancake for a few minutes on each side, until firm and golden brown.
Plate the oat "pizza crust" and spread the peanut butter on top.
Add the sliced banana and blueberries.
In a small, microwave safe dish, melt the chocolate with the coconut oil for about 35-40 seconds to form a drizzly consistency.
Drizzle on the melted chocolate.
