Heat your nut milk to about 100° F so the yeast can be activated (don't warm it too much or you'll kill the yeast).
Combine the Truvia blend, nut milk, and yeast in a mixing bowl until mostly dissolved, then set aside for a few minutes so the yeast can activate.
In a large mixing bowl, combine your two flours thoroughly.
Add in your yeast mixture and stir until a thick dough forms.
Pour in 1/2 tbsp of the olive oil and mix again thoroughly.
Cover your dough with a towel and let it sit for 30 minutes to rise.
Preheat oven to 350° F.
Knead your dough with your hands for a few minutes.
Split your dough into four equal sized balls and roll them out into long rope shapes.
Form them into pretzels and place them on a lined baking sheet.
Lightly brush the top of each pretzel with the remaining olive oil.
Sprinkle each pretzel generously with everything but the bagel seasoning.
Bake for about 15 minutes.
Enjoy them dipped in mustard or your favorite cheese sauce!
